The dead rat shop is real! It is called Julien Arouze and Co., and the rat bodies are almost a century old at this point, having been first displayed there in 1925. They are considered "an emblem of the store," which is--as you might expect--a pest control shop in Paris.

A small but important detail. When Coulette was teaching Linguini the ropes, she mentions, “you think it’s like mommy cooking in the kitchen…” Later, it’s the Ratatouille that reminds Anton of his mother, cooking in the kitchen, which may imply something about Chefs lacking that certain quality that Remmy understood.

Its hard to tell since we only see a couple of scenes in Anton's flashback, but I've always been a little curious about whether the old lady's house the movie started in was his mothers house. Wouldn't it be something if he learned to cook in that same kitchen?

As a french girl, I'm glad you liked this movie. You misundurstood why Colette called ratatouille " a peasant dish ". In fact, ratatouille isn't considered as a gastronomic dish so normally it's not the typical dish you can eat in a restaurant like Gusteau's. Also, what Remy served to Ego isn't the real ratatouille but a " tian de légumes " (vegetables tian in english). The real one is what Ego's mother cooked. About the rat killer's product shop, I read it's inspired of a real shop the producers saw.
