1. TACUNI CAÑUMA (MOUNTAIN RANGE) / CHILITIA
ADDRESS: Frontier of Moquegua with Arequipa
INTERVIEWEES: Franklin + Gianina
🇵🇪ALPACA KIDNEY CEVICHE: Chop tomato, onion, mint, yellow rocoto (Peruvian hot peppers) and mix it up with chopped raw kidney and raw spleen. Add lime juice.
🇵🇪ALPACA HEAD SOUP: Boil head and skin. Add oil, garlic, onion, cumin, salt, and celery. Cook for 30 minutes.
🇵🇪BLOOD SAUSAGE: Clean the alpaca intestines. Stuff them with a mix of blood, corn flour, and salt. Boil intestines. Serve with boiled heart and liver.
🇵🇪CANCACHO (ROASTED ALPACA): Marinate the alpaca with salt. Add the smoker and slow smoke for 2-3 hours.
🇵🇪CHICHARRON: Chop the leg meat and ribs. Marinate with garlic, lime juice, salt, and cumin.
Lightly fry in a clay pot.

Years ago, in Bolivia, I ate chuno which is freeze dried potatoes. I started make it for fun recently. Guaranteed you can get 8 lbs of potatoes in a qt. sandwich baggie. Rehydrate overnight and ya got almost fresh tasting breakfast fried taters. Those mountain folks knew how to preserve and cook potatoes.

I just came back from Chile 2 days ago and flew up to San Pedro de Atacama 4 days there where I ate Llama and Guanaco as well as other stuff. The Llama was tender and tasted like Hamburger, the Guanaco was tougher and had better flavor because it is a wild cousin with a stronger flavor than the Llama, but not by much. I preferred the Guanaco, I was there for almost a month. Down south and up north.

I was recently in Arequipa and visited this region. This area is mostly llama and alpaca ranch community. It is quite remote and most visitors come out here for the scenic tours. It is quite beautiful with the snowcap mountains. There are many volcanoes in this region.
