Most of the combat sports gym give you options for becoming a fighter that fights and other are just for fitness and self defense.

Yes you can get a day pass. When I was in Bangkok last week we paid 500 bhat for a session which consists of approximately 45 minutes of pad work and then option to spar one of the guys from the gym. Great experience I will never forget
