Ingredients:
2 cups orzo
1 large tomato
2 small cucumbers
1/2 red onion
1 can drained black olives
1 bunch parsley
several basil leaves
1/3-1/2 cup grated parmesan
Dressing:
2 lemons zested and juiced
1/3-1/2 cup olive oil
1 clove minced garlic
salt and pepper
Directions:
Boil orzo in salted water according to package direction. Drain and rinse in cold water.
Chop all vegetables into bite-size pieces and add to a large bowl. Finely chop herbs and add to bowl along with prepared orzo. Toss to combine.
In a separate bowl combine all dressing ingredients, go light on the salt, and whisk together. Pour over your orzo mixture and add grated parmesan cheese. Toss well to combine and taste. Adjust seasonings if needed.
