I just binged the entire seanon of The Bear - in essence it was Kitchen Confidential on TV. Anthony Bourdain would be proud with how accurately the show depicted the back of the house. The food on the show is absolutely legit. Matty did amazing on the show, both acting and producing.

What no one has really mentioned, and why I loved The Bear, was that the timing was sooooo right. Covid / post-covid stress and anxiety is where it hit me. Feeling simultaneously frantic and wrung out, trying to do better but feeling like you are doing worse, wanting new challenges but having trouble getting through the day, facing people and arguments and changing times that you just do not want to deal with and having to face ugly truths about yourself--I don't think I would have related to all that three years ago. I would have recognized the talent and appreciated it, but I don't know if I would have empathized or really felt what they were thinking / feeling. I worked in a school that mostly stayed open the past two years, not a kitchen, and a lot of this felt so relatable.

I have to say, as someone who has lived in Chicago for my entire life, this show was beautiful. And as someone that loves to cook and has been in and around kitchen my whole life, this was a very real interpretation of how it is in these kitchens. I've work in two very different kitchens , one was a Mediterranean restaurant thay function like a Chipotle, required lots of prep work , and the other was an Italian dinner kitchen, loved working for both and can say the bear captured what it feels like to work in most restaurant kitchen's, also inspired me to get back to making new dishes, i hadn't tried to cook anything in a while until i watched the show , thanks

I know this isn't Chicago style, but a variation on it. instead of Giardinara and sweet peppers, a place I went to did jalapenos, a think layer of pastrami, and then I think provolone, but it may have been just a good mozzarella or similar. Everything else cooking the beef the same. It was an extremely popular signature sandwich at the place. It was sooooo good. And a variation on that added an Italian sausage... they called it the triple threat.

Been a line cook with some sous time for the past 10 years. The episode before last when everything went wrong 5 minutes before serving gave me intense ptsd. I watched it with my wife and i cried when it was over, because all my wife saw after i got out of work those rare times was just me being infinitely tired, on the edge of an argument always and being an asshole without me realizing it. I could never put into words what a bad night truly was. For the first time ever, watching that episode, she saw and understood. That show is a god damn masterpiece.

Just moved from Chicago and I miss the Italian Beefs the most. Finding a good italian beef outside of Chicago is so difficult, but there are Portillos chains across America that do it very very well for those that want to try a good one. My fav in Chicago is Jay's Beef, absolutely incredible and such a delightful/unique Giardiniera. It's my favorite sandwich in the world. Italian beef/sausage combo with Giardiniera dipped is unparalleled when done right. This looked fantastic, so stoked to watch the Bear.

Paused this half way through to say this is the perfect Yin and Yang duo, I hope they make many more videos together. Matty is perfectly leveled out to the best cadence and demeanor (not that there is anything wrong with the raw Matty).
