I’m trying to complete scarlet and violet base, shrouded fable and stellar crown. I am 88% done scarlet and violet base as of right now but I don’t have very much progress on the other 2 sets. I would like to know some strategies for completing sets.

once you pass a certain point with opening packs, it's definitely 10000x more economical to buy singles to finish off your sets. I'm currently missing 12 cards from stellar crown, and whenever I see one of the ~$20 ones I need at my LGS' I pick them up and if I ever pull duplicates I trade them back to the store. I still buy packs occasionally, but I don't plan on dropping a ton more on packs knowing I can finish my set for only a couple hundred bucks. I'm going to continue trying to pull some of my favorite cards, like the hydreigon SIR, but my primary focus with opening packs has shifted to other sets in the meantime while I slowly seek out the remaining cards from stellar crown. it's gonna take a long time to finish a set, and as fun as opening packs is it's unfortunately not really possible to complete a set nowadays opening packs without spending thousands and thousands of dollars
