On the second level, you can do the sorting later in the process to conserve some conveyor belts. Basically instead of a "V" shape, you make a "Y" shape, where the starting conveyor is shared between both fruits.

There is no difference, but that means in levels with both you can never mix them or you will never get them separated again, so it is still something you have to plan for.
