To be fair, rubies are just red sapphires. They're both made of Corundum, it's the trace materials that alter the color. Green sapphires also exist; no they aren't emeralds, those are made of beryl. My guess is the different names are a relic from before we could look at the actual composition of them, so all we had to go off was the color. However, it's still an architect mistake. Matt, how dare you.

Because those aren't achievements, they're repeatable tasks. There's one for spending 5 minutes at 5:20 in the video. After he collects that, it's replaced with a different task to spend 5 minutes in the game, which is the one being completed at 9:28.
