How to serve food and interact with guests.

This is how to serve food and interact with guests. But first, a quick review of how to carry plates.
Thumb and pinky hooked over top. Fingers spread underneath with palm carrying the weight. If you pinch the edge of the plate, your wrist is supporting all the weight. It'll get heavy quick.
Second plate sits on thumb, pinky and forearm. 3 points of contact.
Now I keep track of which plate is going to which seat. You should never be auctioning food off at a table. It doesn't look good, but more importantly, it takes too much time. People don't even remember what they ordered half the time.
When I approach the table and they're not paying attention, I'll say, "Alright guys, I got your food here." Don't be afraid to get their attention by announcing your presence and intentions. Remember you're literally bringing them food. So you don't need to be shy and apologetic about it.
Part of why I ordered the plates the way I did is because I want to "hug" the guest with the plate. i.e. OPEN ARM SERVICE. This ensures I keep my elbow and forearms out of people's faces.
Now I actually should have sold seat 2 first -- that way I never need to reach over seat 1. Forgive me.
Find a follow if you can so all the food comes out at the same time. That's important. People shouldn't feel like they need to wait with food in front of them because their buddy hasn't gotten his yet. ALSO you really never know what could go wrong on your way back to get the 4th plate. You could slip, someone throws up on the floor, there's some inevitable crisis that demands your immediate attention....
One you drop the plates. CHILL. Let them scan their plates. Then once they see that they like what they see, they'll look back up and make some gesture of approval. OR let you know what they need. Seriously, it's like like 9/10 times. Don't feel weird waiting there. Just chill.
If they do need something, that's a guest request. That take precedence over everything else you got going on. So tend to that asap.
Once they're situated... "Alright y'all, enjoy."

Finally made a change and I’m now doing what I’ve always wanted to do, really excited. Glad you found these then and hope you find them useful. Serving can be a really fun job if you're good at it. If you find yourself in the weeds, just pause and assess what all needs attention. From there prioritize the tasks and execute.

If it's going to take two trips, then bring two plates at a time. Three, then one looks sloppy and leaves one runner looking like they can't carry multiple plates. Also, those two plates should be placed to guests seated across from each other, so no one has to sit without anything in front of them, while the person directly opposite them has food.

I'm learning myself as a busser. Learning how to hold a tray carrying plate full of dishes was a quick lesson. First couple days was a struggle...an obvious struggle. But aftet a tip to hold the tray with a wide hand letting it rest on your hand and forarm, my balance with it has become confidently good. Your hand is the balancer and your for arm is the strength. DO NOT try to overdue it. Build up your strength overtime carrying trays. Because it will become a workout. At my restaurant. We buss with serving trays. So its a real good work out and balance practice. Obky been doing jt for 1 1/2 months and I can confidently carry a tray full of dishes with 1 arm while moving it around. Just takes practice. To be honest, those busser trays you can easly go by anywhere. Buy one and practice walking around your house with it with stuff on it One important tip. DO NOT be afraid to make multiple trips. Don't get over confident and try to test yourself with how much you can carry. You are there to serve and leave a good Impression for the customers. Not test your strength and show off. So take what you know you can confidently even if it means multiple trips.

Oh and for glasses like you asked. Keep the glasses of drinks and we'll anything towards the middle of the tray. Not the edges unless the tray is full and you have to. Remember, your hand is the balancer and forearm is the strength. So for a tray of nothing but glasses, start in the middle and evenly spread out to both sides of the tray. You want the heaviest stuff in the center of the tray as that is where your balance will be. Also if you're wondering about your other hand. Use that to hold the side of the tray as you are walking with dishes on its. Once you're done walking, again, resting on balancing hand, forearm and pushed against your bicep to act as the extra balance while you serve the drinks accordingly.

I know this video is old but thank you. I started my job as FOH support (basically server, i just don’t get tips) almost 2 months ago and your videos have helped me feel less like an idiot 😅! the only other job i had was working at a fast food place so i didn’t have much experience.

I like the tips my own addition would be simply walk around the table to drop off if you did grab 1 first instead of 3 or however you grabbed the plates

yeah for sure. I'm trying to account for tables that may be against a wall too. Best is serve seats 1 + 4 then 2 +3 (people across from one another).

One way to avoid the elbow in their space if serving with your right hand and serving from the left is to get used to folding your elbow inward as you set the plate down. Fine dining restaurants ALWAYS serve from the left and clear from the right. The way he is serving wouldn't fly in fine dining. I do appreciate his confidence and swagger, though. No hate, just facts. :)

like how to carry/ drop mugs? Definitely get rid of the little saucer plate if you can -- those are annoying and make it more difficult to carry a lot out. with large events,.... you just gotta take control of the party as best you can to move them through.

Yeah I serve women first - this video is real generalized and doesn't account for more specific scenarios but yes, typically women then boys then men

The following experience happened to me several times while going to a restaurant with my wife. Waiter greets my wife and gets order. Since my wife typically orders multiple items, the waiter totally ignores me without asking (and not even greeting) anything. Therefore, I need to call the waiter again to give my order. Then the waiter comes back in the middle of meal time and communicates only with my wife to make sure that everything is okay. Finally, the waiter comes with the bill at the end and communicates with me for the first time. I wanted to ask you whether it is normal for a waiter only to communicate with female guests unless the time comes for the bill payment (and, expect a generous tip from the male guest)?

I'll often use trays which are better for hot plates -- or sometimes I'll grab a linen and pinch the plate with that, but that doesn't always work so well as it's harder to get solid grip on the plate. Or last option is you just burn your fingers enough until they lose feeling :)

I had a training as a busboy yesterday and as a skinny guy and not strong enough to carry plates in bulk even when it is in a tray i can say it's very hard for me. Do you have any tips for that? Because it decreases my confidence and this is my very first job😭

You supposed to serve them at the right side drop the plates with your right hand, if you drop the plates with left and right hand you may confused your guest. I mean everything must happen at the right side with your right hand.

I typically serve from my pivot point (where I greet the table) so my approach is consistent. But above all, I serve from the side it makes the most sense. If I got a guy turned to the person on his right, I'd rather serve from the right so he can see me. If I serve on his left when he's turned, too many things can go wrong. This isn't fine dining and I"m more interested in getting food on the table without issue than I am with unconditionally respecting a dining service standard.

I'm a waiter still learning to carry more than three. Starters, my boss takes six! Seriously! Four on the left and to in one right hand. I haven't learned it yet, but I guess that's why he's the boss. Like a previous restaurant chief carried 32 wine glasses in one hand. I counted as he stacked, and he walked off with that tower! I can go fourteen red wine glasses (bigger foot) and my nerves rise.

at like 2:25 , you should walk around the table and have no issue .. What if the oldest women was on that seat ? You should serve her first , so you HAVE to walk to the other side of the table.

When I have parties of 20-30 this dosent work the plates never come out like this I've been so understaffed to the point where I do 4 people's jobs and then some on top of having a shit partner waiter that couldn't handle 3 tables during a rush just me and him only no host no busser nothing I had 3 parties of 8 and like 5 tables of 2-4 people talk about stress all at once this one chick complained that they have been waiting for 15 min they didn't even have drinks and I pointed at the idiot I was working with and told her he's worthless and I'm your only hope I'll be back there as soon I can she didn't say anything within 5 min I was back there and they tipped me $15 which is good for my area you have to prioritize and manage the entire restaurant in times like this I work at a mexican restaurant all the cooks are illegal and mainly only speak Spanish so I had to learn a lot of Spanish to make my job easier so communicate with them to get my food out I have had to do that shit for 12 hour before with just 2-3 min breaks to go outback and smoke then back to it and on the the next because we have nobody totally illegal

Im a server but our plates are very thick and so heavy even without food so i find it very hard to carry more than 2 plates and when trying 3 plates it really hurts my pinky

I'd say you'll just need to use a tray then if that's an option at your restaurant

I would have gotten all 4 plates. I carry 3 plates on one arm, and seat one plate in the other hand 🤷🏾‍♀️

trays are fine! some restaurants don't actually use trays though... and often it's faster to just get a follow

yeah for sure - this is really case by case. like I don't want to be awkward and will immediately pivot out sometimes, but often it's best to chill for a sec in case they need something

I work in hospitality, your techniques aren’t good. Always serve from the right, the ladies first and not just because seat 1 is first. Maybe its the American way but i don’t agree with ur video

well thanks for your comment. First, this isn't fine dining -- this is for higher volume restaurants that are less strict. Second, this is a general overview of dropping plates that doesn't account for all scenarios -- I do try to serve ladies first and will serve plates according to situation (not strictly 1,2,3)
