I’m new to canning.. if I can’t find pt. . Jars can I just half pack at jars of meatloaf and pressure can? If so, do I time cannier for qt. Or pt. Size???
@vond7495
@vond7495 3 жыл бұрын
It's not advisable to half pack a jar, for safety reasons....but I have seen others fill up a half filled jar with broth or water to bring it up to the required head space.

I make my recipe up and form up loaves to fit each jar (large mouth). I place several loaves on a lipped cookie sheet and bake off. After done, I fill each pint jar with a loaf. I top off with my sauce, wipe rims, put lids on and can 75 min. They taste great.

Hey Tracey :-D Im glad my video gave you a grin :-D i seriously want all to know canning? is FUN a. Oh your going to LOVE meatloaf. do your own thing in it ( staying withing safety guidelines) no fillers no noodles. peppers, celery, carrot whatever cut up fine would be great as well. get the center hole pressed in so the heat can penetrate into middle of jar easier :-D i' d love to know what you think of it if you do it up :-D and what you put in yours. doing our dear friends beets in the coming week.. best recipe EVER..can't keep them in the house.. just hunting down some beets first. I have to say. . . Grinning Grandma and Grumpy, Grumpy Grandpa are my favorite family of canning Homesteaders . . .and I've seen 'em all. . . Love you guys. . . .May you emerge from this meatloaf war Victorious. . . maybe with a bit of hamburger in your teeth . .Gotta taste test the product right? . . Keep up the good work . . .Don't change a thing. . . I'll deal with my spit takes myself . . LOL.

"You are gonna get "personal" with your jar. You crack me up. This is essentially sausage making, in concept. For a raw-pack I think it is super important that you reduce the germ load that goes in the glass to beginn with. This can be achieved by: 1. Use super fresh ground beef, not the store bought kind. Go to a butcher and have it ground right there in front of you. Process it the same day. Put in the freezer for half an hour to really cool it down and then in the fridge. Or even ground yourself just before use. 2. Hands thoroughly washed, ideally disinfected with hand-hand-desinfectant before mixing. 3. Same again particularly when stuffing them into the glass. 4. Heat before serving, don't eat it cold (even though with pressure canning, you could, actually) Looooove the HP Sauce trick.... this has to be tried. It's not a war, though, it is actually a peace offering. It would have been a war if you had water bathed and not pressure canned it. And before you say: It canned be water bathed: Let me say: It CAN. The process is just different :-). I can literally hear the heads exploding at this point :-) Go to war :-)

Not at all.. HOWEVER oats are still a binder so go easy on them ..your canning and oats may swell.. i've honestly not ever used it in canning. perhaps try 2 jars in your next meat run. one to sample..one to leave a few months in pantry to see how it reacts. should be fine. but when in doubt do a few tester jars.. the addition of brown sugar sounds good.. may give that a try. I clean all my rims with my meats before putting any lids on. Keeps me from forgetting to do it! I use a different BBQ sauce but sometimes I even do it in wide mouth pints for single meals. Cook time is still the same for raw pack meat in pints according to my old 1970s book. So that's what I do. No disparagement here just stating my version. I like your idea of meatloaf. Plus it's so easy to slice once I slide a knife around inside jar it slides out life a loaf. I think you win the meat loaf wars myself. This version is also gf & keto. Just saying.

Edie. THANK YOU :-D LOVE hearing from a fellow " canner". I've relied heavily the last few months on my pantry. The work is returned as a blessing isn't it? oh id love to see your 1970 canning book. I keep looking for the older books when thrifting. Have a wonderful day. Happy canning.

@@pegsclips forgot to tell you a quick meal tip: I take a jar: of the BBQ meatloaf( break it up well), of my raw pack beans, my salsa + 1/2 cut onion. Put all in pot. Add I jar h20 to rinse out all the jars with & into pot. Bring to good boil. Instant BBQ chili meal. Great with crunchy tortilla chips.

@@pegsclips I did something so dumb! I set all the rings on the jars, gently on, all at once. Of course the plan was to go back and tighten them all! 😳 A bit of a mess in the canner, and three jars did not seal.. The good news is that I got to eat one right away! LOVE those spices! Two jars will go in the fridge for the next 2 days. ;) I did give them a good solid 1" headspace, but I think I need 1 1/2" for meatloaf. I made them in half pint jars because I'm the only one who eats red meat in my house. I call them my mini meatloaves! I keep thinking of a "brown sugar meatloaf"! Did I just dream that, or is there such a thing? I did my bottom row of 14 half pints with your recipe. I did the top row of 14 half pints, adding an onion soup mix packet, two chopped onions, and topped with a spoon of tomato paste. (A YT recipe). I tasted yours, and Yum!! 😋 I'll let you know about the other.. I wrote down those carrots you just did a video on. Can't wait! I really am canning crazy right now! I LOVE canning, but I'm running low on jars.. Tragedy! 😫
