On the walls in the grand salon (16mins 40 secs) you have a big big problem. You can see that the walls covered in cement are very wet. The salt is coming through. This is a bad sign of significant Moisture in the walls. You can see a perfect salt white stain outline around all the stones covered by the cement - this is very bad and the stone that is behind the cement will be being destroyed by the cement and trapped moisture. Moisture control is very important for the wood panels you are installing. Moisture will destroy the panels. You cannot put the wood panels against those walls without first completely removing the cement render and replacing with a breathable HotLime Render and Lime Plaster. It will take a few months for your walls to dry out once you remove the Cement. If you try to install the wood panels without Removing the cement render - all the wood panels will warp from the moisture and then get wet rot and be destroyed. For the amount of money those panels cost - you must fix the walls before you install them.

I’m sure they’ve seen it but you might want to email the chateau on their website. They talked about getting a structural engineer in before making changes. They also talked about a moisture barrier to protect the paneling some time ago. Definitely email them as they may not see the comment.
