BANGLADESHI CHICKEN BHARTA
Ingredients
Chicken ½ kg
Yogurt 2 tbsp
Tomatoes 2
Chopped onion 1 cup
Ginger garlic paste 1 tbsp heaped
Salt 1 tsp
Chili powder 2 tsp
Cream 4 tbsp
Almonds grinded 2 tbsp
Butter 2 ounce
Turmeric ¼ tsp
Whole spices mixed 1 tbsp
Tandoori masala 1 tbsp
All spice powder ½ tsp
Dried fenugreek leaves ½ tsp
Cumin powder 1 tsp
Oil ½ cup
METHOD
Heat ½ cup oil and butter, add whole mixed spices, chopped onion, fry till soft, add in chopped tomatoes, ginger garlic paste, fry well, add salt, chili powder, yogurt, tandoori masala, fry well, add in chicken julienne, cook till chicken tender, add cumin, allspice with ½ cup water. Lastly add dried fe, cream, almond powder, cook till oil comes on top, serve garnished with chopped coriander leaves.

BAINGAN KI BORANI
Ingredients
Eggplant ½ kg
Oil as required
Whipped yogurt ½ kg
Salt to taste
Mint leaves 1 tbsp
Method
Round eggplant peeled cut in round slices kept in water then deep fry these eggplants in fry pan till light golden, remove.
Yogurt ½ kg whipped with salt
Dried mint leaves 1 tbsp
Ingredients for Masala
Oil ¼ cup
Crushed garlic 1 tbsp
Cumin seeds 1 tsp
Tomatoes 3 blanched, skin removed and grinded
Salt ½ tsp
Chili powder ½ tsp
Turmeric ¼ tsp
Sugar 1 tbsp
METHOD
Heat oil, add crushed garlic, cumin seeds, fry for 1 min, add chopperised tomatoes, fry well, add dry spices, sugar, fry masala well, spread masala in a serving platter, then arrange fried slices of began on top of masala, then top began with whipped curd, serve garnished with mint, serve as a side dish.

SPICY CHEESY BITES
Ingredients
Boneless chicken 500 gm cut into 2 inch cubes
French fries as required
Ingredients for Marination:
Baking powder 1 tsp
Crushed red pepper 1 tsp
Black pepper 1 tsp
Soy sauce 1 tbsp
Ginger garlic paste 1 tbsp
Salt 1 tsp
Siracha sauce 1 tbsp
Cream 3 tbsp
Mayonnaise 2 tbsp
Ingredients for Coating
Flour 1 cup
Ingredients for Batter to Dip
Flour ¼ cup
Corn flour ¼ cup
Salt ½ tsp
Chicken powder ½ tsp
Baking powder a pinch
Water to make a thick batter keep aside
Ingredients for Sauce
Oil ¼ cup
Chopped garlic 1 tsp
Flour 2 tbsp
Milk 1 ½ cup
Cream 2 tbsp
Cream cheese 1 tbsp
Salt ½ tsp
Black pepper crushed ½ tsp
Oregano ½ tsp
Crushed red pepper ½ tsp
Crushed coriander chopped 2 tbsp
Cheddar cheese ½ cup
METHOD
Marinate chicken with all the marination ingredients, keep it for 30 mins, roll each chicken piece in dry flour, keep it in a freezer for half an hour, dip chicken in batter and deep fry until golden and crisp, remove and keep aside.
METHOD FOR SAUCE
Heat oil in a pan, add garlic, fry for 10 secs at medium flame, add in flour, remove pan from heat, gradually add in milk, whisk well, put it back on to the heat, add in cream cheese and all the rest, sauce should not be too thick. Once sauce ready, add fried chicken chunks in sauce and toss well. Arrange on a platter, on a bed of fries, sprinkle grated cheese on them, grill for just 2-3 mins. Insert toothpicks in each chicken piece and arrange on serving platter.
