BISCUIT COFFEE PUDDING
Ingredients
Digestive biscuits as required
Ingredients for Coffee Syrup
Water 1 cup
Sugar ½ cup for coffee syrup
Instant coffee 1 tbsp
Ingredients for Pudding
Vanilla pudding mix 2 packets
Milk 4 cups
Ingredients for Biscuit Topping
Biscuit spread 1 cup
Oil ¼ cup
Crumbled biscuits as required
METHOD
Cook together the ingredients for coffee syrup till sugar dissolves, cool, beat together biscuit spread and oil to bring it to a spreadable consistency, arrange biscuits on the bottom of the dish, drizzle coffee syrup over it, now prepare one packet of pudding as per instructions, as soon as the pudding begins to come to room temperature but still runny, pour it over the biscuit layer, now put it in a freezer for just 5 mins, so it sets, once it sets, spread a layer of lotus spread over it then arrange another layer of biscuits and repeat the drizzle of coffee syrup, then prepare the next packet of pudding, let it set for 5 mins and cover it with lotus spread and sprinkle lotus crumbs all over it, serve chilled.

HYDERABADI MUTTON MASALA
Ingredients for Marination
Mutton 500 gm
Salt 1 tsp
Chili powder 2 tsp
Kashmiri chili powder 1 tsp
Turmeric ½ tsp
Coriander powder 1 tsp
Roasted crushed cumin 1 tsp
All spice powder 1 tsp
Cream 2 tbsp
Yogurt ½ cup
Ingredients for Dry Masala Powder
Green cardamoms 4
Cloves 4
Black cardamom 1
Fennel seeds 1 tsp
Black cumin 1 tsp
Small stick cinnamon 1
Black pepper 1 tsp
METHOD FOR DRY MASALA POWDER
Grind all together into a fine powder.
Ingredients for Curry Paste
Above prepared dry masala powder 2 tbsp
Desiccated coconut 2 tbsp
Coconut cream powder 1 tbsp
Almonds 6
Green chilies 4
Ginger finely chopped 1 tbsp
Garlic chopped 1 tbsp
Tahini paste 1 tbsp heaped
Water as required to make smooth paste
Ingredients for Curry
Oil ¼ cup
Clarified butter 3 tbsp
Cumin seeds 1 tsp
Chopped onion 1 ½ cup
Water ½ cup
Salt 1 ½ tsp
Chicken powder 1 tsp
Chopped coriander 2 tbsp
METHOD
Ground all the dry masala and make fine powder. Blend all the ingredients for curry paste in a blender and grind till smooth paste, apply marination ingredients to mutton and leave it for few hours. Heat oil in a pressure cooker, add cumin seeds, chopped onion, fry till golden, add the blended curry paste, fry for 5 mins on medium flame till oil comes on top, add the marinated mutton, fry till the masala well roasted and oil separates. Now add water, chicken powder, cover and cook for 15-20 mins till mutton tender, finally sprinkle chopped coriander on top and serve.

MALAI BEEF KABAB
Ingredients
Beef mince 500 gm
Chili powder 1 tsp heaped
Black pepper ½ tsp
Crushed red pepper 1 tsp
Green chilies grounded 6
All spice powder 1 ½ tsp
Roasted and crushed cumin 1 tsp
Tahini paste 2 tbsp
Cream 3 tbsp
Bread slices crumbled 2
Ginger garlic 1 tbsp heaped
Cheddar cheese ½ cup
Salt 1 tsp
Chopped coriander 4 tbsp
Chopped mint 2 tbsp
Lemon juice 2 tbsp
Cloves grounded ¼ tsp
Cinnamon grounded ¼ tsp
Kebab chini grounded ¼ tsp
Coal to give smoke
Skewers as required
Oil to grease hands
METHOD
Put all the ingredients in a food processer and chopped well till smooth, apply oil on hands and transfer the kebab masala in a bowl, give smoke of coal, with greased hands make kebabs around the metal of oval skewer and put in a baking tray, brush the kebab with oil, bake on 180 D for 20 mins, serve with paratha or nan.
