Hi everyone, a few days ago I found this recipe on Instagram. It looks very good so I try to make one: D
This recipe is without gelatin, so the challenge of this cheesecake is to whip the cream properly and having a texture like cheesecake with gelatin. A very important thing is to use a super cold cream and all the equipement too ( I've chill the bowl and whisk attachment in the fridge before using).
Ingredients :
for the crumbs
250g lotus biscoff biscuits grinding (Set aside 50g of the crumb mixture to garnish the rim with later.)
50g melted butter
*for the cheesecake
400ml heavy cream (make sure the cream is super cold)
450g cream cheese
200g lotus biscoff
50g powdered sugar
for the garnish
150g melted lotus biscoff
50g lotus biscuits
