I think (don't quote me on this) that the 'monitor off' should be tightly in place even if the player were listening on the 'monitor on'. How I record precise guitars is doing the first method you showed (two tracks, one monitor on, one off) but then dial the monitor mixer in my interface to hear half direct signal and half the DAW. This way I've noticed that I can record spot on time. I assume my first sentence is correct because I'm following the metronome and drums from Live with all the plugins enabled and the record (monitor off) comes out perfect. Of course, the live playback on the 'monitor on' wouldn't match the guitar playing due to the high latency, but it helps to listen to the tone and feel of the effects in the track.

Thats a good idea. I am using these examples for people recording straight into the box. If you have a mixing console and the ability to listen to your live playing using the direct out of your console or even an amp with direct out, there may be other options for recording without latency because you may not need to here your Ableton Live routing.
