@@koolguy728no, that’s literally just how Chris is lol. He does it all the time. He doesn’t mean any harm by it, he just has his own instinct and thoughts on how to do things. But it’s a common occurrence. I would say it’s more rare for him to take and use advice, than it is to take advice just to not use said advice.

This whole series is based on him being a "super taster" and having the most delecate taste buds on the planet (honestly, it's why I hate all. His recipes... Bc they usually turn out so bland).... But I'd love to put his super tastely bids to the test and have him blind evaluate 10-200 different soy sauces!

@@zangrat it's mixing the pieces of meat with starch (often corn starch) AND baking soda. The baking soda is alkaline and changes the texture of the protein to be more tender.

Chris is truly a cooking savant - even when he doesn't get it 100% I am always so impressed by him just identifying so many major ingredients. Maybe some day he can come visit us at our test mill and bakery in Lynn, MA and do a taste test with our stone-milled whole wheat organic bread versus the industrial roller milled competitor 👀

Speaking of General Tso's Chicken let me put ya'll on: Jane G's Dim Sum House in University City West Philadelphia makes quite literally the best General Tso's Chicken you will ever have. It's a tad bit expensive but it's so unique and delicious it's worth every penny.

I’m really annoyed with his attitude about the double fry. First, he asked the token Asian for help then proceeded to ignore it. And then determines it’s a fussy step. Chinese cooks have developed this technique for centuries and there’s a reason those techniques are still used today.

He made an objectively worse dish as a result all because he "thought he knew better" than generations of talented Chinese chefs. He consistently whines about techniques that are even moderately involved, and I think he makes worse food because of it.

Golden Mountain is a Thai soy sauce, which is quite different than the standard Chinese soy sauce. If you're wondering why your homemade Thai food is not hitting it, try replacing the soy sauce with GM.
