Upcoming movies have been postponed (most to unknown release dates!) and now, every major chain of movie theaters has closed indefinitely. Poor Chris... these videos are pre-recorded so it's like... 😭 he's probably gotten the news by now and devastated. I LOVE going to movies!

@@JotaC not really. Just because he knows something's wrong wouldn't mean he would know where he went wrong. If they gave the actual percentages then at least he know he actually needs to change something. It's annoying to me when Chris does his second try and barely changes a single thing when it's already obvious to the viewers that he got the recipe wrong. It's like someone thinking 1+1= 14 and never being told it's wrong so no matter how much you ask them, 1+1 will always equal 14 and never learn otherwise.

Yeah this suggestion feels right. Would be cool to see him try to adjust based on what areas he's getting wrong, cuz that could go both ways. He could hear he's off by 25% on ingredients, and then end up pivoting too much and seeing something completely different. That would be entertaining to see him produce very different results if he really attempts different techniques or throws out ingredients he's sold on.

I want another element in the process. After Chris has finalized his dish, give him the name of the dish originator and have him make another version based on what he knows about the recipe creator. I think this would be great because chefs do have habits and flavor profiles. It would be nice to see that discussion. Enjoying this series.

This episode was so upsetting. He got so stuck in following ‘traditional’ ways to make this dish. He knew the fact that parsley meant this dish was not being made in a traditional way. It was rough watching him get in his own head and stick to his guns, even when he self admittedly said it felt wrong. That being said, he’s still an excellent and knowledgeable cook.

Not even close. This is a Bobby mass appeal recipe, so you can't judge him on it. Bobby is a proper chef. It's like looking at Ramsay's garbage recipes and saying Chris is better.

I think it's hard to pin down a good definition of "better" in this context. Both men can make delicious food, no questions asked. However, I doubt this dish was developed to display the full cooking skill of Bobby Flay, rather it was probably meant to introduce a simple, modified form of carbonara to people who've never even heard of the dish. Just like many of Chris' recipes are meant to make certain dishes more accessible to a wider audience of people.

I love how the further into the series we get, the more it seems Chris is not recreating, but trying to make it objectively better. Idk thats what I've been seeing the past couple videos at least. Is this recreating signature dishes or is it making blind dishes better? He bought pancetta because the grocery store was out of guanciale... yet he still found guanciale in the test kitchen 😂

@@SoKette that's because bechamel is made with butter. I'd also question the pork fat. Sometimes I'll continue to cook with it if I'm using a pork product, but that comes down to personal quirks. A purist would start bechamel with butter.

on the other side of your thought - is it really necessary ingridients on the original recepie in? like - 4 or 5 kind of cheese, when u got 2 strongest ( like parm ) and 1 meltiest? and fat -i can tell the diffirence if u fry an egg in bacon fat or butter, but im shure i cant define who is who in case of baked carbonara recipe, because the kind of preserved pork in that dish ( or panchetta or other pork belly\breast etc part)

Side note: I truly appreciate the fact that they also highlight the products where he’s fairly close, but not quite what the recipe is. Depending in your experience cooking, you may not recognize that peccorino is similar to parm and guanciale is similar to panchetta
