Jan, I watched this video and just had to comment. I was born and raised in New Orleans and it was always a Monday night dinner. My mom taught me how to make it, always delicious! You have to try this at least once. 2 tbsp butter into pot, add 1-2 chopped onions, depending on the size. Then add sausage, andouille or Tasso if you can find it. Cook it down then add garlic to taste. Let sweat for 3-4 minutes. Add 1/2 gallon water and beans that have been soaked and washed. Season with salt, pepper, Cajun seasoning and 5-6 bay leaves. Let it come to a boil and them simmer, stirring occasionally. You don’t need to cover. Simmer until beans are soft and water is absorbed. If it is a little too watery put a big spoonful into a bowl and smash them with a fork and add it back into the pot. It works really well and I absolutely love this recipe. The little something you were missing was smoked ham hock. I always take half a ham hock boil til tender and falling off the bone, strip the meat add to pot of ham broth with beans while I'm browning sausage and vegetables, toss those into beans add seasonings then cook low and slow

If you saute the sausages after cutting on the angle, they have more surface area to brown up and get that good crunchy flavor.

Andouille sausage is spicy itself so additional seasoning should be added carefully. Yes, mashing some of the cooked beans will make the broth thicker. I like to use a can of chicken broth in place of some of the water. Ham also adds good flavor. Your video made me hungry for red beans and rice! Will have to make some soon!

I love a good pot of beans, no matter what type. :o) Jan, to help with the heat, you can add a little brown sugar to it. Also, I generally let my beans cook with a ham hock. It really has a lot of flavor in it.

Jan, next time mash some of the cooked beans and it will make the sauce thicker. Also before I add a Cajun spice, I sprinkle a little in my hand and lick it to see how hot it is 😊

Love a pot of any kind of beans and spooned over cornbread. I use Tony's......can't spell the last word that starts with a C...😂. It is very good. That type of sausage may have been hot also. I usually put a piece of ham.....or preferably a ham bone that has some ham on it. Everybody has their own way. I love red beans and rice. Could almost smell it cooking. 🙂. I love to make different kinds of beans in the fall and winter. I make black beans and rice they way you just made this red beans and rice, but I don't put tomatoes in them. Guess I have to go to the store in the morning and get some beans..

I always slice my sausage links on a long bias so there is optimal surface contact with the pan... I use 1 Zattaran's link to 1 box of Zattaran's Red Beans & Rice a d a little fresh holy trinity and garlic...🤫😉👍🏻

Just to say with all respect. Beans have to be first in pot and cook until tender, (that will take about 1 hour) sometimes more .after that adding all the seasoning and meat! approximately 20 minutes before beans are completely tender. After that when all the seasoning and extras are in. Let the pot stay on stove for 15 minutes to absorbed the flavors from anything you desire to put. Let after done, rest for 20 minutes **no flame) and enjoy it with nice and easy white rice. My suggestion only with all respect. Be all safe and keeping healthy muuuah. God bless

Interesting, I always thought they cooked the rice with the sauce when the beans was almost done. I need to make this minus any hot seasoning because none of likes any spices that are even a little warm. Going to try the ham hocks like when I just make a pot of beans. Thank you

Can you make any recipes with out rice? We can't eat rice ,we are diabetic , I was thinking when you were adding stuff tomatoes. And you added them looked good but we don't do hot too. And one other thing, maybe desserts diabetics can eat. Love watching you doing your magic!

Maybe you could use some of the new veggie "pasta". We tried the zucchini, it was OK. Our favorite is using spaghetti squash instead of pasta, rice or potatoes. Hope you like it as much as we do. 😊

Some brands of that sausage is really hot. I thought you put the trilogy in it, celery, bell pepper and onion. If you use tomatoes it becomes jambolya. I could be wrong. I use the red beans instead of kidney beans which I dont like. You can buy a whetstone to sharpen things at the dollar tree.
