Use the grease from the meatloaf to make a roux and you won't need those gravy packets anymore.

Sausage goes in first, then the veg cooks in the sausage juice. No smoked ham hock or turkey wings?

Looks great and I'm sure it taste great, but from my calculations the shrimp have been cooking for at least 50 minutes. Any expert chef would say the shrimp are over cooked (add them last) they take less than 5 minutes to cook. After 5 minutes that they shrink up from losing thier moisture and get hard. They must be magic cajun shrimp, where can i get some, just say'n...!!!!!!

Great video, I'm subbing and I want to see what else you been cooking, partner..I'm Spanish and my family came in through Florida and spent some time in Louisiana before settling in New Mexico and I have a variety of recipes from our grandparents. I keep them alive but love what you're doing here..I have tried different recipes but the taste was no big deal. I want to try yours because of the authentic Cajun music at the beginning and "Legally Blonde" at the end! haha but I have a question. I live in Colorado and I see "andouille" sausage made by different people. What am I looking for when I look for great sausage? Maybe I'll make my own, got a recipe?

Seems like it would take at least 3-4 hours since the beans weren’t soaked overnight.

That's not how u make red beans and rice. Thats beans over rice.

kzbin.info/www/bejne/qYmViZ6Oas6nqcU This is a much better way to make Crawfish Etouffee. This recipe is more a labor of love. However, if there is no love in your labor, then there is no love for your food...

Looks great. It’s the starch he washed out of the rice. Excess starch makes rice sticky. By washing it out your rice turns light and fluffy and the grains seperate more easily 👍🏻

Looks good! but one point of criticism though. This is a Creole Etoufee, not a Cajun Etoufee. Both are good though... just making a clarification. Great vid! Thumbs up

Why saute your veggies in canola oil, than cook sausage that releases tons of flavored oil only to drain it all off? I cook my sausage and then add my veggies to the fat that comes out of the sausage. The flavor is 10x better and #1 your not wasting canola oil and #2 There is no reason to drain all the flavor from the sausage fat because Great Anduoille sausage doesn't have too much fat in it to begin with. Justin Wilson would be ashamed of this parydee on Cajun cooking

A couple of years ago, on "The Lottery Changed My Life," there was an ol' duffer name o' Leroy Fick, who won a big jackpot. He had a really annoying squirrel of a son who spent it all for him, buying useless crap like fake swords and armor and "selling them" out of a cheap motel room in Saginaw, Michigan. He just wouldn't close his mouth. And he had nary a brain cell. kzbin.info/www/bejne/qXeaeoWPjKafmZI Unfortunately, it looks like Mr. Fick took a gander off the Tittabawassee Bridge. He had enough money to live comfortably for the rest of his life. The cameraman reminds me of the son.
