I really can't stand a 3rd party talking the whole time. Oo, ok, yup, oh, yup, wash those out, yup, yup. Oh! Don't do that! Yup, ok, see how annoying it is? Then to not use that little bit of fat you drained off in your red beans and rice is almost criminal!! I stopped watching after this! Couldn't take no more!

It can be hot, room temperature or cold, it's gonna cook anyway. It's BEST to use 6 cups - 50% chicken stock or broth with 6 cups - 50% water. Plain water washes down your seasonings. Sear the sausage first, do not add oil, the sausage makes its own oil/grease, take 1/2 cup of beans out and smash them down then add them back to the pot to thicken the gravy. Add the sausage 30 minutes before the meal is done so the sausage stays moist and juicy. Serve with rice and sweet cornbread.

I am surprised at how fast those cooked without soaking them overnight. do you usually cook them without soaking?

That's why his fire was so high, with the heavy rolling boil. The beans should be soaked overnight so they can be set to "simmer". No need to add water every 5 minutes, lol. 50/50 Chicken Broth and water is more flavorful.

Looks great and I'm sure it taste great, but from my calculations the shrimp have been cooking for at least 50 minutes. Any expert chef would say the shrimp are over cooked (add them last) they take less than 5 minutes to cook. After 5 minutes that they shrink up from losing thier moisture and get hard. They must be magic cajun shrimp, where can i get some, just say'n...!!!!!!

Great video, I'm subbing and I want to see what else you been cooking, partner..I'm Spanish and my family came in through Florida and spent some time in Louisiana before settling in New Mexico and I have a variety of recipes from our grandparents. I keep them alive but love what you're doing here..I have tried different recipes but the taste was no big deal. I want to try yours because of the authentic Cajun music at the beginning and "Legally Blonde" at the end! haha but I have a question. I live in Colorado and I see "andouille" sausage made by different people. What am I looking for when I look for great sausage? Maybe I'll make my own, got a recipe?

Looks great. It’s the starch he washed out of the rice. Excess starch makes rice sticky. By washing it out your rice turns light and fluffy and the grains seperate more easily 👍🏻

Why saute your veggies in canola oil, than cook sausage that releases tons of flavored oil only to drain it all off? I cook my sausage and then add my veggies to the fat that comes out of the sausage. The flavor is 10x better and #1 your not wasting canola oil and #2 There is no reason to drain all the flavor from the sausage fat because Great Anduoille sausage doesn't have too much fat in it to begin with. Justin Wilson would be ashamed of this parydee on Cajun cooking

It's best to soak them so that you dont have that super high heat and rolling boil. That's why he had to add so much water.
