This red lentil curry is the perfect vegan one-pot dish! With sweet potatoes, bell peppers and creamy coconut milk, it combines healthy ingredients and delicious spices to create a warm and filling meal. Easy and ready in just 30 minutes!

Ingredients for 2 servings:
150 g red lentils, washed
1 sweet potato (approx. 200 g), peeled and diced
1 bell pepper (approx. 150 g), diced
1 onion (approx. 100 g), diced
1 can coconut milk (400 ml)
400 ml vegetable stock
1 tbsp vegetable oil (10 ml)
1 tsp curry powder
1 tsp cumin
Salt and pepper

Preparation:
1. Heat vegetable oil in a large saucepan.
2. Fry the onion cubes in it for 3 minutes until translucent.
3. Add sweet potato and bell pepper cubes, sauté for 5 minutes.
4. Stir in red lentils, coconut milk, vegetable stock, curry powder and cumin.
5. Cover with a lid and simmer over medium heat for 15 minutes until lentils are tender.
6. Season with salt and pepper to taste and serve hot.
