This Mocha crunch cake is AMAZINGLY DELICIOUS 😋!😍👌🏻🙌🏼 i needed to make second batch of honeycomb candy cause my housemates ate the big chunks😂the sponge cake was so moist and soft, i love that it had a hint of bitterness from chocolate and not so sweet, more on the side of chocolate flavor. the buttercream has the perfect level of sweetness, it was so flavorful and the best Mocha buttercream I ever tried, it complemented the flavor of the sponge cake👌🏻i just needed to dissolved though the coffee granules to 1 Tbsp of hot milk, my coffee granules were too big😂 This is my go to recipe whenever someone ask for mocha cake😋❤️ thank you Kurt for sharing your recipes 😍🙌🏼🙏🏻

Kurt, I've been watching you off and on since I discovered you a few months ago when searching for Red Ribbon recipes. My wife and daughter (from Angeles city) moved here with me in Texas in 2017, and I try to find things that remind her of home. I also love baking and learning how to decorate but my full time work doesn't allow me tons of time. I appreciate you doing your techniques & videos, Salamat! Unfortunately we are a very long drive from Houston (the nearest Red Ribbon-and of course Jollibee) and I'm planning to make this for my wife's birthday so I hope this turns out great. It's very involved so I'll plan most of the day to work on this tomorrow (starting tonight if I can). I'm confident I can do this, I don't do much with meringue, but love butter cream frostings and cream cheese frostings. I have a Wilton Ultimate decorator's kit with tools my wife got me for Christmas over a year ago, so I believe I have what I need. I just never made candy before, so that will be new to me for sure. If you have not already, can you post how to make Red Ribbon's brownies? I sense a lot of chocolate ganache in the batter, it feels much like an american southern fudge in texture and I love their brownies and anything with Ube. Thanks again & be safe there and healthy in NYC!

Tried this for my birthday but the cake didn’t set overnight as friends come to celebrate! My 1st honey comb is a failure as I use electric stove and burnt it even before it reach hard crack temp. So the 2nd try I turn down the heat at 260’ and and turn out good! Thank you will look forward for more cake recipes!!!

Thank you!! :D If cake flour is not available, you can substitute with all purpose flour and cornstarch: for every cup of cake flour needed, add 1 cup of all purpose flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour. Hope this helps! :)

Hi Maricel - for the coffee, you can just make coffee however you normally make it for drinking. I use a Keurig machine, so I just use 1 Keurig pod which makes a maximum of 1.5 cups of liquid coffee - and I use 3/4 cup of that. Because I use a Keurig machine, I cannot control how strong my coffee is. If you use instant coffee (like Maxwell House brand for example), just mix 2 tsp (or whatever the bottle recommends) of instant coffee into 3.4 cup of boiling water, mix it in. The strength of the liquid coffee won’t have too much of an effect on the final cake. Hope this helps! :)

Arlene Cox Hi Arlene. I’d say it would be good to start with 2 round baking pans to bake the cakes in, an oven of course, an electric hand mixer for frosting, a spatula to spread frosting, and some parchment paper to prevent cakes from sticking to pan. With just these you can pretty much make some variation of the cakes I make. After you feel more comfortable, you can get a food processor to make crumbles more easily and a piping bag with icing tips... but these are not necessary, and you can still make great cakes without them. Hope this helps! 😊

Hi Pauline - thanks for your comment! I'm glad you liked the recipe. If you feel the mocha chiffon layers were a bit dry, I'd suggest adding a little more vegetable/canola oil to the wet ingredients (for example, adding 2/3 or 3/4 cup instead of the 1/2 cup oil in the recipe). Dry chiffon cakes could also be a sign that they are overcooked. So I'd suggest checking for doneness 10 minutes earlier, and seeing if the toothpick comes out clean. Hope this helps! :)

Hi Aileen, thanks for your question! If cake flour is not available, you can substitute with all purpose flour and cornstarch: for every cup of cake flour needed, add 1 cup of AP flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour. Cake flour has a lower protein content compared to AP flour, which it creates a more tender texture, finer crumbs, and better rise, which are ideal for chiffon cakes. And substituting with cornstarch combo like this imitates that. Hope this helps! :) As for your question regarding baking powder... this recipe contains baking soda, so baking powder is not needed. Even though the two are similar (baking powder contains baking soda), they are used differently in baking. Baking soda is much more basic (it is pure sodium bicarbonate), and will make cakes very bitter if they don't contain a neutralizing acid. Baking soda is used in cakes where the base is countered by an acid (like buttermilk or vinegar) in the batter. You'll notice my ube cake and mango cake recipes don't use baking soda. They don't have acidic ingredients so the recipes use baking powder. Baking powder has neutralizing agents that don't make it bitter. If you used baking soda in the ube or mango cakes, the cake would turn out bitter. This particular mocha cake recipe can handle the baking soda because cocoa powder and coffee are very acidic. So they neutralize the basic-ness of the baking soda. Most chocolate cake recipes I know use just baking soda because they can handle the strength of baking soda without making them bitter. As for mocha cake recipes that use baking powder, my guess is they either don't have as much neutralizing acid in batter, and they have to use a lot more baking powder - you have to use approximately 3x the amount of baking powder as baking soda for the same effect. As a side note - this recipe is a chiffon cake. So it gets most of its rise from the air whipped into the egg whites in the meringue. The baking soda (or powder) is just to give it even more lightness / airiness in the texture. Sorry for the long response - hope this answers your question! :)

Hello - if you want to make a buttercream frosting with no eggs in it, I'd suggest making an American buttercream, which is made of butter and powdered sugar. It will be a lot sweeter and heavier than the Swiss meringue buttercream shown in the video. Hope this helps! :)

Hi Grace. The ratios for this Swiss-meringue buttercream frosting are such that the frosting becomes smooth and not too sweet. If you'd like to use only 1 cup of butter, I'd suggest cutting all of the frosting ingredients in half - this will result in half the frosting, and hence half the fat/sugar intake :) Hope this helps!

Hi Arlene. I don't own a convection oven, so I don't have personal experience with it. But from what I understand, there should be a setting to be able to turn the convection feature "on" and "off". If there is, bake this cake with the convection setting "off". So convection ovens should be able to work like a regular oven. For baking cakes, it is better not to use convection - since the movement of hot air from the fan and exhaust system might dry out the cake, and cook it unevenly and prevent it from rising. But if there is no way to turn off the convection feature, I'd suggest cooking the cake at 315 degrees Fahrenheit (25 degrees F lower than in the recipe). And check on the cake doneness about 10 - 15 min earlier than required. If not yet done, put it back, but keep checking on it every 5 min. Baking with convection is more efficient, so they will cook the cake faster than with a regular oven. Technically, I think either 2 tsp of baking soda (like in recipe) or using 3 tsp of baking powder will work if you only have Dutched cocoa powder. The primary leavening agent in this chiffon chocolate cake is the whipped egg whites in the meringue. The baking soda/powder is really just added to make leavening a "sure thing". The only concern would be the baking soda making the cake bitter without enough neutralizing acid. I think there's enough acidity in the cream of tartar + coffee. But I'd use 3 tsp of baking powder just in case. Hope this helps! :)

Hi Sir ATM i am making choco mocha crumb cake my only problm s peeling off the honey comb coz r parchment paper here n d phils is like onion skin so it really stick to d honeycomb. Also d honeycomb is not like dat u made cracky mine s a bit firm

Hi Pearl - usually when people do not get crunchy honeycomb candy, it's because they didn't use a thermometer to ensure the sugar reached 300 F for the hard-crack stage as shown in the video. Did you use a thermometer? As long as it reached 300 F (the hard crack stage), your resulting honeycomb should be very crunchy. If a candy thermometer is not available, you can estimate the hard crack stage using a bowl of cold water. Have a bowl of cold water and a spoon next to your boiling sugar. When the sugar syrup starts to boil (on very high heat), every few minutes, take the spoon and scoop up a spoonful of syrup and drop it into the cold water. If the syrup forms a soft ball, or pliable threads in the cold water - it is not yet hot enough. Keep testing your syrup every 2 minutes. It has reached the "hard crack stage" required for making honeycomb when the spoonful of syrup turns into brittle threads in the cold water that easily cracks / snaps. Hope this helps! :)
