What if your pump is capable of producing 10,000psi, but the cylinder is only rated for 2,500psi? Is limiting the pumps pressure to 2,500psi appropriate or would you purchase a different pump?

Is it appropriate? Depends if it will produce enough force at 2500 psi for the cylinder to get the job done. You need to calculate that and let the math decide. Assuming it's sufficient, then sure, you just set your relief pressure on your pump, which all hydraulic manufacturers do.

I’m a fast learner and I’m eager to learn about whatever I need know to be successful at my new job. Anyone have any advice or tips on what I can do at home to learn more about hydraulic hoses or anything hydraulic? I’m starting from scratch. 0 knowledge

Lord I hope you're wrong, because the math in this video is literally as simple as it gets when engineering hydraulic systems. There is quite literally nothing more basic than what's shown in this video.
