We never expected life in our 20's to look like this, especially when we were initially intimidated by even crossing the English Channel! However, the San Blas islands have us under their spell. Could you see yourself living a simple life on a sailing boat?

North Wales cook tip for the best cooked fish on the beach. 1) Dig a hole in the sand 2)Make a fire and put hand size rocks in it. 3) Add a layer of leaves/grass at the bottom of the hole, add the hot rocks (use a stick) then covet over with grass. 4) Place fish in the hole(cover the fish with grass/foil) 5) fill over with sand for 40 minutes. The meat fall off just by running your finger over the fish... Best way to cook a fish 😉

such a beautiful area you are in San Blas. So much under water life you could just eat all your meals from the Ocean. Plus you've the coconuts and other vegetation that also edible on land. I don't know if you have ever watched "Plukky" of Sailing into Freedom, an Australian who ended up spending so much time in the San Blas islands that it became pretty much his home away from home. He is currently building a new boat, but I think you can be sure that if you ask ANY of the islanders if they know Plukky, you'll get an enthusiastic yes! He became a bit of a legend around there.

Spearo tip: scale and gut fish in the water before getting out. I usually do it with in seconds of shooting a fish or at the end before steaming back home but back in the water so scales and guts remain in the water.

Paradise. I remember walking a beach on Aruba and it started to rain. From London-Amsterdam-Berlin latitude, my reflex was to run to under a few palm trees as shelter from the rain. After two jumps, I halted, looked up and said, thank you someone. The water was as warm as the atmosphere (35C = 95F). The fresh water on the salty skin, though was welcome as a shower and for adding coolant to the skin. What about the Panama region?

In that area, the American crocodile is prevelent. Inland in Venezuela the Orinoco crocodile and a few types of caiman are found. Although not aggressive to humans, they will readily defend themselves if you approach them.

They are found inland and the American croc is found in mangroves in brackish waters as well. The only "salt water crocodiles" are found from N. Australia through the Malay archepeligo, along the south east Asian coast into parts of India. The Salt water croc and the Nile croc in Africa are the 2 species of crocodilians known as "man eaters". This leaves 21 species of crocs, caiman and alligators that are normally shy around people (like bears) but as soon as people start throwing them food, they lose their fear, and just wait underwater for the next splash, expecting more hot dogs or chicken bones. Unfortunately, about 10 times in the past 100 years, that splash was a kid or pet in Florida, causing authorities to pass an ordinance: 2000.00 dollar fine for anyone caught feeding alligators in Florida. That was in the early 90s, it may be more today. Although some are man eaters, we still have the big brains and can learn how to avoid them. Only those with small brains insist on poking the bear until accidents happen. Or croc in this case.

A young Japanese snorkeler was grabbed by a Croc off Green island a couple of years ago. It actually released her. But left her with some lifetime scars on her legs and thighs! Be wary guys especially close to rivers!

"It does not taste fishy". When the fish dies and its metabolism comes to a halt, after some time it starts to smell "fishy" because reaction chains (metabolic pathways) continue but are no longer supervised. The fishy means it is not "fresh" any longer. The initial fishy smell will probably disappear when you heat the meat enough. Beyond fishy it starts to smell like ammonia and this does not go away in cooking. The ammonia will damage your mucous membranes and you want to prevent that (by not eating such a fish and by not even trying to cook it).

Seems like you two are into the higher cuisines above fish and chips. The snapper must have been delicious. Seemed like a barracuda swam through the frame, but not targeted. Is this an awareness of these being very high up in the food chain and potentially not so healthy for humans to eat? Shark ... generally leave people alone as long as they do not make splashing noises. Splashing noise triggers the hunting instinct as evolution taught that the individual doing so must be having problems and consequently is an easy snack. Shark 2. Does it taste like ray? They're not all the same, I know, but restaurants here occasionally offer ray and it tastes really good (because of the absence of less attractive hunches). (I don't have to explain a marine biologist, I think, about the ray/shark nearness in the taxonomy.)

In the San Blas people don't tend to eat Barracuda, I'm not too sure why but we've always been told to eat what the locals eat and you'll be fine. I imagine it would as they are fairly closely related but we would never target one for numerous reasons.
