Oh in this video I must not have seen thr knives as I was looking at the microphone in your hand (I understood why you removed it, but holding it caused me to pay greater attention to it). Also it took me awhile to read your shirt, cursive writing is a bane of mine.

Secret -add a can of concentrated tangerine juice, plus the appropriate amount of water. Tangerine juice tastes more like fresh squeezed than just plain oj.

Good vid. Looks like you deleted the other one, but thanks for responding to my comment about the OJ browning. For some reason, I had Tropicana OJ that turned brown across 2 different batches from a year ago. I tested the o2 absorbers from one of the bags and they were still working, so I doubt it was oxidation. Best I can guess is that it was non-enzymatic browning, perhaps caramelization of the sugars from the heaters? It also had a different flavor profile, like less tart. Anyway I appreciate the videos. And don’t worry about the mic on the chest- it’s weird that people get uncomfortable with sounds that every human body makes 😂

Thanks! The other video isn't deleted, it's just unlisted. That way it still shows up in the "Rehydrating Freeze Dried Food" Playlist. I didn't want to delete it and lose any of the comments. Interesting; I would have thought that any caramelization from the heating (and I would have thought that it would need higher temperatures) would have shown up by the time you took it out of the freeze dryer. Maybe the cheap brands we get have additives to help prevent browning whereas the higher end brands (trying to stay "all natural") don't. Ignorance is bliss. I hadn't even considered the possibility of non-enzymatic browning of the dried OJ. If I had read the papers about the "non-enzymatic browning of orange juice" before I'd freeze dried my OJ, I may have never tried it. Thanks for pushing me down that rabbit hole! Mostly the papers talk about liquid juice, but they do mention concentrates and powders. (I'll have to read them, and others, a few times before I might start to understand them) Maybe I was just lucky with the variety I used. The right ascorbic acid concentration, perhaps? @@SchoolReports Yeah I don't remember what it looked like a year ago when it came out of the freeze dryer, but slight caramelization is all I can think of that would alter the color & flavor besides oxidation- and I'm pretty confident that didn't happen since the O2As had plenty of life in them. The FD OJ wasn't brown before rehydration, but it wasn't what I would think of as a nice, golden yellow OJ. Could be lots of variables! Thanks for the links, I'll read up on them.

Ahh Epicenter Bryan, those were good when he was on KZbin. He was my first teacher when it came to freeze drying. On a side now, the coffee is cool but probably frustrating haha. I hope it finally sets for you, camping without coffee is tough!

I loved watching their taste testing. With a larger group I think you get useful info. The coffee all froze well in the end. I just thought it was very interesting that a random few cube froze completely solid while others were still almost all liquid. The physics of freezing - odd stuff.

Nice! Thanks for take 2! Definitely prefer the no pulp version. I do have a question, have you ever tried freeze drying the "frozen" concentrated orange juice that you can buy? (Just thinking it would probably save a lot of time?)

I haven't freeze dried any for about 5 years, so the only video I have is one of my older, shorter videos. I feel that I have to apologize for many of my older videos. 🤣 In my focus to keep my older videos very short, most of my older, shorter videos are almost devoid of information. I tried hard to keep the videos down to less then 10 or 15 minutes, no matter what I had to cut out! (Like information!) I suppose those that insist on "fresh" OJ that's not from concentrate, and they are willing to pay the prices, then they could freeze dry that too. No doubt it will taste the same regardless, but I guess you've made it into concentrate yourself. LOL

I suspect it will add moisture. As he said you really want to minimize adding moisture to the powder. If you're doing it in the mid of winter probably not a problem but if down south with high humidity that would be a problem.

Reasonable question. You could blend it before bagging, but I would blend it at the time of use. I don't blend any of the freeze dried foods after drying and before bagging and certainly not orange juice or anything sugary. Freeze dried orange juice (and all freeze dried food) is very hygroscopic. (it will start pulling moisture from the air so soon as it's out of the freeze dryer) We powder it in a big zipper bag using a rolling pin to crush/powder things. (or just by hand) Once freeze dried food is powdered, and it's a humid day, the powder will start to clump almost before you can get it into the bags. The smaller the particles, the more surface area and the faster it will absorb moisture. Spinning it through the air in a blender is probably the prefect condition to absorb moisture. I guess I could run a dehumidifier in my bagging area to get the humidity levels super low. The way we been powdering now. kzbin.info/www/bejne/gaOleqJ6pqybn6M
