Drawing spring water, chopping wood, and baking bread. A simple life and bread made with care.
The owner of "The Moon and the Clown", Yoshinao Nagaya, quit his job as a civil servant and started baking bread in the storage of his parents' house.
The store and house, built in 2020 by a renowned architect, are in perfect harmony with the bread. Customers come from far and wide to visit.

1, Levain
2, Rye sour
3, Hops leaven
4, Raisin leaven
5. Yogurt leaven
6. Sourdough made with hops and raisins
7. Industrial yeast
Hops leaven Ingredients
Hops, potatoes, apples, Koji
(It is said that Koji increases the decomposition power of wheat and brings out the sweetness of wheat.)
Raisin leaven Ingredients
Raisins, granulated sugar
(The addition of sugar also leaves a sweetness in the liquid leaven, which is used as a fruity sweetener in combination with the power of fermentation.)

The bulk fermentation looks over fermented.Nice to see some Central Milling flour. Cinematography top notch as ever. I like the aspect of Japan discovering a new take on bread. Everything can be improved.

Неужели на живой закваске получается такая корка жёсткая? У меня есть сомнения насчёт живой закваски . Она, закваска должна несколько дней готовиться, ни в одном видео не увидела , как закваску готовят ...? ))

Is it possible to ask the owner how he store the raisin yeast water, does he refresh it before using, does it shake it daily while in the chiller?
