This video is an old one that he took a while to upload, you can tell by the textures of the blocks or he just has it on a different version, at 2:02 you can see him breaking iron of the old texture and not the new one, so it is possible this was an old video.

speedrunners usually choose 1.16.1 if I'm not mistaken, bcs that version has better drop rates and no brutes. Tho you can try dealing with brutes by blocking yourself out/staying out of their reach and lava bucket them

btw i have no idea how speedrunning works but at 19:03 how are the beds automatically coming into your inventory

Basically, if you have 2 of one thing, such as 2 white beds (color matters) in your inventory, if you place one down, you can middle click on it and grab the one in your inventory you didnt place, without going in your inventory.

The 'pick block' keybind (middle click (mouse wheel) by default) will equip the item you're looking at into your main hand slot if you're in creative or have any of that item in your inventory.
