I made ONE slight modification - i did the "cut off the top of the garlic, drizzle with EVOO / seasoning, wrap in foil and cook on high temp til soft like a paste" instead of his method for the garlic. This dish was AMAZING. I felt transported to that american italian nostalgia that we all know and love!

I made this tonight. It was absolutely amazing. I noticed several people asked how much freshly grated cheese to use and I wondered too. He doesn’t say in the video. I used 1.5 cups and it was perfect.

The only part of this alfredo recipe I haven't really done before is adding pasta water when mixing the noodles and sauce. I will try it next time and see if it helps the sauce to cling to the noodles.

Step 1Follow instructions to cook fettuccine subtracting about 2 minutes from the cook time to ensure the pasta is al dente (it will cook further in the sauce). Reserve about 1 cup of the pasta water. Step 2While the pasta cooks, in a large skillet over medium heat melt 1 tbsp of butter. Add grated garlic and black pepper and cook for 2 minutes, stirring frequently, until the garlic is fragrant and the pepper is lightly toasted. Step 3Whisk in heavy cream and the rest of the butter. Bring the cream mixture to a simmer and let reduce over medium for 2 to 3 minutes or until the sauce has thickened slightly. Step 4When the pasta is fairly al dente add parmesan and cooked fettucine to the skillet and toss until the cheese is melted and the pasta is fully coated. Add ¼ cup of the pasta water and simmer for an additional minute tossing until the sauce is glossy and cohesive. Keep in mind the sauce may still look a little loose but it will thicken as it cools. If the sauce is still too thin, add more pasta water, ¼ cup at a time (the starch in the water will thicken the sauce). Season to taste with salt and pepper. Step 5Move pasta to a bowl and garnish with freshly grated parm and parsley.

Here’s a twist … instead of pasta water use flour in the heavy or whipped cream . Also add some seasoning to the Alfredo sauce … I added pepper and Mrs dash . Also I added parsley and Italian seasoning as well

Love this video but one thing that cracks me up, for some of the ingredients he's like "grate your own cheese, it's much better fresh! I know a lot of people like this and that’s great but it’s not true fettuccine Alfredo. There is no cream in it. It’s just butter, cheese and pasta with pasta water to make it creamy. I personally don’t like the cream. It curdles and I don’t like the texture. But that’s just me.

Would you rather be loved by three groups of people or hated by one? Olive Garden Alfredo is not worth the hype they are given. I do not understand the hoopla. It's good, but not WOW great.
