Nice to see you exploring and enjoying the landscapes, I personally think that's the best way to experience nature. Keep enjoying Jujuy, it's a beautiful province! By the way, what you cooked wasn't zucchini, it's a local variety of squash from the Rio de la Plata area called zapallito (from the Spanish for squash, zapallo, so it literally just means little squash).

Sorry but you have two things wrong: Zapallito is a variety of zucchini, a round zucchini. "Zapallo" is not an spanish word, its a quechua word, the lsnguage of the Incas, as this part of Argentina was part of the Inca Empire. Calabaza is the spanish word. We use a lot of quechua words that we ignore are not spanish: choclo, chaucha, poroto and many others.

The Argentine Northwest keeps our most precious roots, which are the Inca and Spanish cultures. From there Argentina originated. Then the center; Santiago del Estero and Córdoba together with the region of Cuyo (San Juan; Mendoza; San Luis). That is pure Argentina. The rest is later and populations constituted by immigration. If you go again to buy in a butcher shop; ask for these cuts to roast: 1 "Costillas" 2 "Matambre" 3 "Vacío" 4 "Marucha" ...And you´ll see God's face
