Its time consuming but not that difficult if you start at the end of the circuit and work back to the switch or power source. Once the wire is installed, check the circuit for proper operation. Multiple wires from the end of the circuit to several power sources makes it somewhat more difficult but certainly doable. Ive rewired vehicles that had the entire wiring harness removed from them with nothing more than a factory shop wiring diagram.

The first thing I think about when I see a car described as a 'resto mod' (although I don't see that term as much now as it seems they use the simpler term 'customized') is that they RUINED the dash by putting in some fugly lookin' gauges! Watching all of that wiring as an Auto Electrician is great, love it, I'd use the old temp sender in the new engine so it drives that gauge correctly or you will have to rewind the gauge to suit the new sender, The alternator warning lamp wire should go straight in but the alternator might need an ignition wire also. unfortunately using that AMP meter is going to be a problem as the new alternator will have too much power for it and those old shunt meters caused a lot of volt drop, you could however change it to a volt meter. Auto Sparkies will get asked to do these sort of conversions often, well not this exact one, very few seem to understand just how much is involved in the wiring of this sort of job, you seem to have it well in hand. Can not wait for more.
