Repurposing Old Damaged Gates for the Chateau Park

Journey to the Château, Ep. 243 - In this Friday episode, Patrick and Stuart work with friend Tony to repair and install missing wooden gates for the back park of the chateau. They repurpose an old set of gates that were acquired locally to replace the rotted wooden gates that were beyond repair. Patrick also does the first harvest of figs from the chateau gardens for this season, and is back in the chateau kitchen sharing a recipe for making Fig Plum Chutney.

The gates are such a pretty design and in good shape considering they are probably pretty old. They add to your property as well as being useful. Tony is a great friend and Stuart your carpentry skills will finish off the gates in time. Patrick, you still look tired and unwell so I hope you are resting. I know it’s harvest season so it’s hard to let things wait until you’re better so I think you need to make yourself something soothing and healing. The chutney looks so delicious and must smell divine. It would be delicious with goat cheese and maybe prosciutto. You are the master of chutney, jams and everything delicious. I think “Tony” might be considered a new tool we all wish we had. I find myself thinking “I need a Tony” to complete this for me. We all want a Tony. I think he would be as useful as having Amazon, a car, a really good pen to write with or a favorite screwdriver. He is all those things and yet we do not have a “Tony” or a “Tony Sidekick.” Maybe this is only available in Europe. I think he should be exported if only for a short time.

I wished I could cook with you one day! Love watching it though!👍 Our small fig tree shed small, unripe fruit in July, and we thought that's it and again no figs this year. But it surprised us by having a second wind and we had real nice figs now in September. Of course I made chutney, however with apples from our garden instead of plums. And to improve the coloring I added dried, chopped cranberries. That worked well! Gute Besserung for you, Patrick!🧣

Hi Chris. I love to cook with guests. So much fun. I’m always a big fan of using what one has in the garden! I made apple fig chutney last year. Was delicious. Adding cranberries is always a great idea. Our figs also shed fruit early. Those are the flowers from last year that didn’t sprout. Completely tasteless! 😳🤣. I can watch you put up jars of chutney all day long. My mother canned up many things as we had a big garden and 10 children. 😊 She made a chili sauce that had spices in it that made the house smell so good! Tony is a jack of all trades. I have a favorite confit of figs and a little plums in Barolo wine, no ginger or onions so not a chutney but not too sweet not so heavily spiced, but walnuts added towards the end and adds tannins. Hi Patrick and Stuart, As always, I really enjoy watching your vlog! Even though I have no interest in making chutney, it sounds as though there are many wonderful ingredients in it. I am more interested in baking and DIY renovations than in cooking. However, Patrick you seem to be a really excellent cook! Both of my parents were ( more or less) gourmet cooks ( both long deceased now) but I was never really interested in cooking. Hi Connie. We have so much fruit, we share with friends and neighbours. We have frozen peaches and plums as well as quince juice for jelly. We love our projects and plan the next ones. So glad I’m not the only person who uses a coffee grinder for my pepper. My husband spends a few minutes every month or so grinding a jar of mixed pepper for general seasoning purposes - black, white, red and some cardamom seeds. When I’m seasoning meat I often grind it further in the pestle & mortar with sea salt and paprika. Sadly I’m the only chutney fan here, and I so enjoyed watching your bottling session. There’s real satisfaction in making such things. But what a lovely addition to Camembert. Thank you.

You might really like chutneys. I started to love them when I lived in Cape Town. With meats, cheeses…. On a sandwich…. And you can substitute figs for peaches, mangos or mix them. Hugs

I love this time of the year when all the spices come out and the house smells so delicious. I love chutney. I wish I had access to fresh fruit like you guys. I know it is a lot of work, but it is so worth it. Last night, I made 2 tropical banana breads, and tonight, I am making zucchini breads. That chutney looked so delicious.
