She consideres Mia as her mother and knows that Mia loves Ethan thus making him her "daddy". She wanted to get disposed of the Bakers and that's why Jack wanted to kill Ethan. He didn't want to be replaced.

When I played this first bit I was grossed out by the dinner table scene but not scared. Weirdly the fear kicked in for me after I got out the chair, in these kinds of games being the one in control seems to make a big difference to my sense of dread. Great game btw, just finished it!
