I’m going to assume you’re a child before I begin this; Yuri’s behavior was inherently self destructive and by no means was a way to endure euphoria or any kind of joy. Yuri was deliberately hurting herself in a fit of mania, which could be seen as euphoric.

Second, Monika specifically told the MC in game that Yuri cuts herself as a way to release her emotions, even mentioning it may be a sexual thing. Furthermore, when Yuri confessed to the player, if you accept her confession, it is heavily implied that she stabs herself out of sheer joy. By no means is her behavior justified, but I don’t think that Yuri didn’t feel euphoria when she was manic.
