Question why do you have your vent cap up so high? What does that do for the smaker?
@ElSenorBbq3 ай бұрын
Convection. You shut it down too much and it wont have proper convection to light the pellets, too high and it can't feed pellets fast enough to stay at a consistent temp. Personally I do about 2 fingers width and that seems to be working well for me.

Hi. I was curious how the Charc Pellet would be at a low temp and then sou vide. If I get the charcoal taste with the ease of pellet and SV then I wouldn't have to buy a ceramic or gravity fed. Side Note: I noticed Pit Boss now has a gas and pellet which would be ideal if these gave you an almost charcoal taste? Thoughts? Thanks
@ElSenorBbq5 ай бұрын
I'm not sure, I haven't tried that combo personally. I would think it might do very well but once you hit it in the sous vide, the smoke flavor intensifies a bit more. I'm not sure how that'll work out with charcoal pellets but I would start with a blend to see how you like it.
@texascrossbowdude6362 жыл бұрын
Have you tried a mix of charcoal pellets with one of the wood varieties to get a special flavor?
@ElSenorBbq2 жыл бұрын
I used it with lumberjack 100% oak and got color and some flavor to it. I think these are better for just smoke and sear not for a long term smoke.

whats up dude! what's the reason why you put the temp probe shield back on the grill? did you see it didn't make any differences or were there problems you ran into? Also before searing you said " let's build up the fire", at what temp on the grill did you start searing? I haven't had nice flames like the ones you had for this video while trying to sear some of my cooks. Thanks!
@ElSenorBbq3 жыл бұрын
What's up Chris? When Pit Boss finally came out with an updated firmware, they told me to put the entire smoker back to stock because that's how they did their testing so I did and haven't had an issue with it. When you open the sear plate, you don't automatically get a large fire so you have to give the auger time to feed pellets into the burn pot. Almost all pellets I've used takes quite a bit of time for them to build a decent fire, these pellets on the other hand though, builds it very quick and very hot. Way hotter than I had anticipated. I hope that helps!

Worked 17 years at Royal Oak at the White City Oregon plant. One day management from head office in Georgia came out and shut the plant down. Royal Oak products are now made in China and South America. They have ingredients in it that we couldn’t even have here in the US. Not good. I will never buy any Royal Oak products.
@ElSenorBbq3 жыл бұрын
That is very unfortunate to hear. As an OIF veteran, I try and buy American when I can. Unfortunately almost everything is made overseas so it's pretty difficult to choose certain items that you can afford that are American. That's why when I decided to buy my offset smoker, I went 100% American with Lone Star Grillz.

@ElSenorBbq Жыл бұрын
Not really. I did a video that ended up being a flop. There was no flavor in the brisket I did with them solely. I had to mix it with oak pellets to get any kind of flavor. Personally, I'd use them only for reverse searing. Give it some good smoke and then let them get really hot to sear it. Hope this helps!!!
@92greenebeen3 жыл бұрын
almost charcoal flavor?? well thats good! Hmmmm.. get the cheap pit boss charcoal pellets from walmart in the hopper and use the royal oak charcoal pellets in a smoke tube.. BAM!! I bet you'll be on the money!! 😉😉
@ElSenorBbq3 жыл бұрын
I've had the cheap pit boss pellets but they aren't fully charred all the way through. What I mean by that is you can break it apart and it looks like a normal pellet. These are 100% charred all the way through. Last week I used these pellets exclusively for a brisket smoke. There was a very large mix in results, some good, some very bad, I'm doing another brisket and posting up this weekend about all my findings.
@henrywright46332 жыл бұрын
I had no idea people actually seek out charcoal flavor when pellets made using wood so easy. 🤷
@ElSenorBbq2 жыл бұрын
Some folks like the combination of flavors when using a kamado or a weber kettle where you mix wood chunks with charcoal and it has it's own flavor profile. These burn pretty hot so they are great for searing if you are having trouble getting your temps up as well.

An auger fire? Like the fire worked its way back from the auger into the hopper?
@Todd.T2 жыл бұрын
@@ElSenorBbq Yep. The smoke starts coming out through the pile of pellets in the hopper. Dust will cause it. That's why you don't dump the last of the pellets into the hopper. Scoop with a slotted spoon. If I thought the auger was on fire, I'd open the lid and turn up the temperatures so the grill speeds up the pellet feed because it thinks the temps are low and it needs more pellets.
