Depends on the kitchen. My buddy was a CDC in some big restaurants around NYC. He told me some are union now with HR departments. So if a new CDC gets hired and comes in, and starts trying to point out the shit they're doing wrong, or tries to show them new ways to do things...they literally get pissy and just go report the Chef to HR and then the big bosses come down on the Chef. It's especially bad if you yell at one of them for being incompetent. You're pretty much gone the next day as a head chef. The head chefs aren't part of the union and are considered management. But because they lack union protection, the low end workers abuse it and just try to get them canned before they get canned themselves for their constant mistakes. Lol It's really backwards. But that HR/Union nonsense might only be particular to fancy hotel restaurants. I doubt it's all spots.

Exactly, anyone would be super stressed in this situation. Markus and Sydney were the most frustrating to me in this situation. I get that Markus has passion for his baking and donuts, but there is a time and place for that, and it wasn’t in that moment. Sydney though, she caused the situation. Even if it was an accident by leaving that function on, it was still her fault and she abandoned her work because of the stress of the situation and Carm’s yelling. They were both childish and selfish. I know it’s a TV show, but if this was my restaurant, it would take a lot of apologize and convincing for me to even consider letting them back in my kitchen.

Also, Sydney saying "It's not on me" and leaving after accidentally leaving pre-order option on the to-go machine and creating a huge backlog of orders is very frustrating. And yet everyone is mad at Carmy like he's the bad guy while they other two brats leaving when they were needed most, because their feelings were hurt. To be clear, Carmy overreacted and should not have yelled and cursed at his employees like that. That was very abusive and not good for the working environment.

When Tina, Richie or Marcus mess up he just says don't worry about it. The pressure got to her and he is partly to blame. No one was perfect this episode. Everyone made points, everyone also fucked up, everyone crossed a line in some way. I truly understand and get everyone here, tho. As for Sydney leaving... I get it. It is HARD to confront a genuine fuck up as it is, it is even harder when shit is just CHAOS and everyone is yelling at you. But Sydney was doing her best to keep her head above water. What pushed her over the edge and made her leave, I think, was Carmy's quick, angry comment about "I told you to not put out that risotto, it was not ready!!" in the middle of this situation after telling her that he was fine with it and that they'll talk about it later. THAT, on top of all that chaos (and her probably feeling like Carmy maybe left her for the wolves, so to speak, in the past. That whole French Brigade thing, for example), made her leave. Like she said, "You are a GREAT chef. You are also a piece of shit." She certainly isn't perfect. Like I said, NO ONE WAS AT THEIR BEST in this episode. But I get where everyone is coming from. All they can do now is try to resolve this shit, or forgive & forget, and continue building something together.

@@jojolg2201 Carmy did a lot of good technical cooking things within the episode, sectioning off different things and optimizing the production of the food, but the part he did poorly was his communication with his peers (communication and management of environment are major parts of his character arc). You just can't be that incendiary and expect a good flow to start regardless of circumstance. I don't even know if the man would have stopped screaming if everyone had performed perfectly, he was literally yelling at a sharpie. All that being said I do think Syd could have done better, probably should've put the knife down. Marcus needs a hearing aid or something.

Carmy asked for specific steps to be taken and everyone in the kitchen was living in a different world. Carmy comes from a kitchen of tough love and it sculpted him into one of the worlds bests. Gordon Ramsey is a walking example that discipline is a form of running a kitchen that can work.

Syd and Marcus did Carmy dirty. He's not a "piece of shit", he's stressed past his breaking point in part because of THEM. He should have tried harder to hold it together, but he's just trying to get shit done and they're both holding everything up with their personal bullshit, both of which Carmy would have let go, though he could fire the both of them for not following directions and making massive mistakes, he would not have done that. He cuts everyone else more slack than they cut him. You'll also see later that Carmy is from a family that collectively has no chill and yelling, cursing and freaking out is their normal way of dealing things. Carmen tries hard to not be like that, but in moments of extreme distress, he really can't help it.

You can understand why carmy wouldve been incredibly frustrated, but at the same time, that's never a good excuse to be yelling and cussing everywhere. He was dealt a terrible hand this episode but as the owner you have to take that in stride and still be able to give orders and communicate without freaking out. Syd, marcus, and richie all fucked up and shouldve been better, but carmy shouldve handled them fucking up with more tact.

I was really pissed at Sydney and Marcus for leaving the way they did. Marcus just was not doing his job, plain and simple. Sydney made a series of honest mistakes. She left the preorders on. She got that review written about them which probably caused a lot of those orders. All honest mistakes but the fact that they both took zero responsibility is what got to me. Sydney was lashing out at everyone unfairly and then they both just bail with her saying “this is not on me” was just infuriating.

My only serious gripe with the show is that Sydney and Marcus’ shitty behavior this episode isn’t acknowledged. Carmen losing his cool like he did was also wrong, but that doesn’t mean the two of them are guilt-free. Even with that, though, I still live the show and love both of them in season 2.

Nooo. They're not doing improv. There is a writer's room with professional writer's and the stories have to make sense. They can't just make up random lines, especially not with a tight script like this that requires an actor to be in a certain place during a certain line so that the camera can follow them. In fact, with something like this, it's important to know your lines almost perfectly. They also probably rehearsed this numerous times which helps tremendously with memorization. Improv can be wonderful and fantastic but it's really important to give credit to writers as they work really hard. - And a lot of actors are trained in theater. Memorizing 20 minutes worth of lines is nothing to memorizing an hour and a half or two hour show where no one is yelling "cut." And, if you have a solo piece (just you on stage for 50 minutes straight), that's even harder (I've done all of this). So, this isn't too bad. The hardest part with something like this is actually keeping the same energy take after take. Just because it's shot in one "take," it's never actually recorded in only one take, so you're on set doing something this stressful again and again and again all day and that's really the toughest part. To stay locked in. To not get exhausted. To not burnout. To not lose your mind in the same way your character is. That's certainly the toughest thing and I commend them for that.

Completely agree. The only thing I can think that’s harder than memorizing all your lines in a high stress scene that must be done in one shot, is doing it all over again SEVERAL TIMES and still keeping momentum. Which is why it is so impressive when shows manage to get it right.

Yeah this episode was hilarious and wild. But I agree with them walking out because there ain't enough pay in the world to deal with a boss cursing you out like that. It was a cascade effect where everyone was unleashing their pent up anger on each other, that had less to do with Sid's mistake and more to do with underlying anger from previous days and situations.

This is a tricky one because on one hand Sydney was being pushed around and fucked with all season so her quitting was a natural result, but on the other hand she was completely in the wrong for quitting in that moment. Reason being that even though Richie was obviously being a dickhead per usual, once shit hit the fan and they needed to get shit done, he stopped fucking around and got to work. Now I know him not having a specific role makes it a little more difficult, but at that point they were firing up everything so it didn't really matter what he was doing as long as food was being cooked. She chose the wrong time to blow up at him and quit when she was the reason shit went south in the first place.
