I ended up buying a box of chocolate from Willie’s Cocoa [not the one shown, one with more citrus based flavours] & having it sent to a friend for Easter. Was great that it fitted through the letterbox so she had a great surprise when she got in from work. She loved all the wrappers & extras like the map & crib sheets. But she's still waxing lyrical about the quality & flavour of the chocolate now. She's a bit of a chocolate buff & thinks its the best tasting she's ever had & has taken her off on taste journeys like she's never experienced. So with her birthday coming up I think another selection from them is on the cards. So great call from all at Sorted for bringing it to my attention, many thanks.

One thing I learned from a chocolate tasting session was how the soil changed the taste of the chocolate. Love seeing you guys present the cacao pod or in Brazil we call it the fruit. Though its not too common to see it sold as fruit throughout the country, when visiting cacao farms I had the opportunity to pick em fresh, crack em open and eat the fleshy bits while they were still soft and juicy. Never saw anyone bite into a raw seed just as you wouldn't bite through most other raw seeds. We did however save them and roast them, then eat bit of them, but they are too bitter for most pallets. When they did the big harvests, not only would they get the juice from them but if left in the fridge for even just a few days, it would ferment into a really nice sort of mead/cider.

As a pro pastry chef who works with chocolate in various forms... Liquid, pellet, galze, coverture, sauces, cocoa powders, etc. I like that there are more companies coming out about educating and making the chocolate experience for the average person. Here is the u.s. most people don't really get real chocolate... They get some type of sugared and altered cocoa flavor many times. Also, chocolate behaves the same way grapes for wines do. They take in the minerals, climate, soils, environment, etc. The same way wine regions have characteristics, chocolate and the cocoa plant specifically does the exact same thing. Even different batches from the same farm can vary, especially depending on when the harvest of the cacao pods occured.
@DessertGeek2 жыл бұрын
I hear that, but also there's so much growth happening in the US craft and bean to bar communities - both for makers and consumers! And I even feel like we're making progress in stores with brands like Marou and Dick Taylor in more grocery stores, but I do wish things were going faster. (Then again I also remember the first NW Chocolate Festival and wow how much have things changed since then.)
@pastrychefalfred8762 жыл бұрын
@@DessertGeek I have mixed feelings and the whole craft chocolate thing... I think it's overrated to a point. Yea I get the whole single origin thing. But it doesn't mean anything if they aren't educating people on the whole process. I feel they focus way too much on being "special" but don't really teach anything. Alot of it just looks like expensive fancy chocolate, the average person still isn't really getting the full amount of information that they should.
@DessertGeek2 жыл бұрын
@@pastrychefalfred876 I totally get those feelings and agree with you! And have been having those exact discussions with folks in craft chocolate media! I do think there needs to be more efforts put into education online, including as part of the chocolate purchasing process, since I don't really think we can go back to focusing primarily on in person and event education. Like there's a lot of information posted on *how* chocolate gets made, but not as much about why the chocolate costs more or why transparent trade matters. And there are plenty of higher level videos and roundtables, but not nearly enough for beginners, and it's time to fix that.

BTW, they are selling coffee berry juice... the "bean" comes in a berry, and the berries are eaten locally, but the berry juice wasn't widely marketed. Might be interesting to also feature. For Ebbers, he can also grow a coffee plant... But also Coffee leaves are also edible.

Love the subject. Lead many educational chocolate tastings while I was an R&D manager in a chocolate factory. A few tips.. Ensure all chocolates are at room temperature. Start with the lightest flavour & work your way to the "heaviest" flavour taste profile. General rule, Start with White, milk then dark -... dark lowest to highest % cocoa content. Have a glass of room water on the side, take a sip /swish the mouth with water after each type to get a more accurate taste. Consider all the senses - look, smell, taste - allow the piece of choc to naturally melt, then chew.. really nice to close the eyes & allow the full awareness to be focused on the euphoric sensations of the whole experience. Would be fun to introduce a blindfold comparison of "imitation choc (choc based products with different oils) to real choc" that holds cocoa butter to see if you can tell the difference.
@DessertGeek2 жыл бұрын
That sounds like such a cool job! Can I ask why you recommend going low to high cacao percentage for tasting? The craft/bean to bar standard right now is to go high to low cacao percentage, so like 80% to 65%, as otherwise the sugar content can overwhelm the flavor profile for the higher percentages, so I'm curious about why your technique was the opposite!
