Last time I check Undertale, Sans only slept 8 hour at night waking up constantly(Papyrus said that Sans nap 8 hours each night, wich he coniders too much and Undyne said that every time she stay the night on Papyrus and Sans home, she is not able to sleep because of how often Sans go down to get snacks), so i'd say this is not the only time Sans is restless. Even when he sleeping while Undyne Chase us, he actually awake enough to not only know what's happening but to be able to see what face Frisk was making. Even when he faints on the genocide run, his sleep is so light that even the movement of an atack is able to wake him up.

Bruh I don't want to be that guy but a little gripe is that the infection can't get out of a vessel because of injury but through emotional attachment that's why when the Hollow knight (the boss not the knight) was placed into the black egg he got corrupted because of him missing the pale king since it saw him as a father figure, so honestly him, Sans and Pap getting along will make him less hollow making it easier to escape.
