Campbell's actually recently released a gluten-free version of their cream of mushroom soup that uses cornstarch and rice flour instead of wheat flour. I'm not sure if it is available everywhere, though we have it at our local Market Basket.

I've been making my own in a big batch once a year to freeze for holidays. But if that one works, I may retire the ritual. 😅 The base of mine is steamed cauliflower, and it somehow doesn't end up tasting like cauliflower. Likely because of the ridiculous amount of butter I cook the mushroom and onion in. Lol
