Rice Pancakes
These pancakes are made with rice flour and coconut cream. And it has yeast and baking powder as leavener. Rice pancakes has so many version in different sides of the world specially in Asia where rice is abundant. Traditionally you have to soak the rice in water overnight and grind it the next day, but in this version to make it easy we will use rice flour so there's no need to grind the rice. Nowadays rice flour is so accessible because it is available in groceries, baking stores ang local super markets. And to make it more special we will add delicious fillings.
ingredients:
3 cups rice flour
2 cups water
1/2 tsp salt
1 tsp baking powder
3/4 cup white sugar(less if preferred)
1 cup kakang gata(more if needed)
combine:
1/8 cups lukewarm water
1 tsp instant dry yeast
1 tbsp white sugar
Fillings(optional)
cheese
buko strings
uba halaya
chocohazel nut & sweet bananas
