My mom used to make this when I was in school. I didn't know it's called onigirazu these days. Now I miss her food. :) Thank you chef Dai for another great video! BTW, are you still making videos from your restaurant?
@CookingwithChefDai8 жыл бұрын
Hi Jun, always a pleasure. I know what you mean friend....nothing beats Mum's food from childhood, does it? Nostalgia is such a strong emotion. Your comment reminds me of an apology I made to my own Mother recently. When I was a little boy (a long long time ago), I sometimes showed my disappointment when she would prepare some of the dishes that I didn't used to like very much like most mushroom dishes, sunomono etc. But they the dishes that I love and appreciate now as an adult and miss the most. I really appreciate my Mother working so hard and preparing all of those great dishes that we were lucky enough to eat as children.......

You are absolutely right notiestgirl. It's funny because I visited Chef Togashi's website just the other day and was disappointed that he didn't have a KZbin channel. I made the association with the food item and not the individual. I guess this has become a popular concept and is making the video rounds. Chef Togashi makes a very nice vegetarian version of onigirazo that was posted by Simon and Martina on their Eat Your Sushi channel. It's a great idea and I am inspired by both chefs. Thank you for setting the record straight. :) My apologies to Chef Dai for the mixup and my thanks for the excellent demonstration. I look forward to viewing more of your recipes.

To explain the name, "onigiri" is usually just written in kana as おにぎり, but it comes from 御握り, where 御 ("o") is an honorific, and 握り ("nigiri") means "grasping", as you would grasp a rice ball to form it when making it. The name of this is onigirazu, where the difference is in 握らず ("nigirazu"), which instead means "without grasping", as we can see you don't grasp it!

I live in Japan and I just heard from a guy who works for Hagoromo, a canned tuna company on TV. When canned tuna was new to the market in Japan some decades ago, the guy said, the company wanted to introduce it as something similar in taste to chicken. Chicken of the sea. That's how they named canned tuna, Sea Chicken. But then, I remember USA had canned tune called Sea Chicken more than 30 years ago, if I remember correctly.

"Chicken of the Sea" was probably taken from Starkist Tuna marketing. During WW2 and after the name of the product was "Chicken of the Sea. So more than likely they were in food drops made as humanitarian aid, then after the war this product was dominate in the industry. Canned foods were some of the first trade products after the war. Just a theory.

To add onto what Shavonne TV said, tuna started being called "chicken of the sea" because in the US there is a seafood packaging company called Chicken of the Sea. So it kind of caught on like calling facial tissues "Kleenex" and adhesive medical strips "Band-Aids". The brand becoming so popular that the name applies to the product instead of the real name for it.
