About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. My mum always eats Riceberry rice because she is diabetic. It's good for her health in controlling her blood sugar levels even though it is more expensive than Jasmine rice. I have known this rice recently because my university in Thailand researched about it and I saw it in a shop at university. After that I bought 10 kilograms of it for my mum.

Discovered Riceberry here in South Thailand about 2 years ago, I love it, it's the only rice I cook at home anymore. Smells a little like frying bacon when it's cooking, but not at all once cooked and it's delicious with a really great aroma. Thank for another great episode.

I use black rice, or forbidden rice or whatever they were calling the blackish rice last time I bought some, on salads instead of croutons now that I am gluten intolerant. Its the only time I cook rice with salt and then I just throw it on top of green salads. Black rice/green salad is my favorite natural healthy gut cure to improve motility and get the bowel moved. Plus it just tastes really good and satifying for a chef salad kind of a meal.

I can find it anywhere in Toronto... I'm new to rice, but switching because of gluten issues.. I like mixing all colors, but found that I should add the white rice after 10 minutes or so because it cooks faster. Also adding some mushrooms and/or chicken stock will make it almost into a meal by itself. PS: you should make some videos with beauty tips :)

I realize this clip is quite old. There’s now a new rice called กข 43 here in Thailand (don’t know if it’s available anywhere else) it’s better for diabetic ppl than riceberry. You can google it. Just wanna share ka. 💛

Shaun Lasdoce I personally bought riceberry from Thai grocery store in Woodside, Queens. if you know where Sripraphai restaurant is located, there is a small Thai grocery store across street. Hope this help 😁

I love to eat riceberry rice. I tasted once. Is this good for diabetic? How i wish there is riceberry here in the Phil. but sad to say i can't fine any in the mall..

Incidentally, I picked up a bag at the local Asian market after you published the red rice video, thinking it was that. I'm delighted that I can now use riceberry rice in my cooking. Can you stir-fry it?

Hi there, Lilian! You can find thai riceberry rice at REDMART or Qoo10 or LAZADA. There are several brands like SONGHE, PADDYKING, FRESHRICE.

WOW!!! That sounds Awesome!!! I'm all organic and very mindful of nutrition... This rice sounds like, just what the Doctor ordered... There is a HUGE difference between GMO and Cross-breeding... I'm going to look for it at T&T and other stores... I've already share this video with others. I hope they are going to "Subscribe" after this one :-) I really wish you'd focus a bit more on Nutrition rather than simply Taste... I love Thai food, but it is not very nutritious... Your Mother is correct in switching to a more health grain... Thank you soooo much for sharing this information... Oh! You did not mention how to Store it... Does it go bad aka rancid, if not used quickly...???

Doesn't appear to go bad as quickly as brown rice but I store it in a cool dark place. Brown rice though, I put in the fridge.

When I said "Nutrition rather than simply Taste...", I did not mean to negate Taste in favour of Nutrition. Even Nutritious food can taste great :-) Take many foods in Thailand, like Fish Sauce... It can be made totally with nutritious ingredients... In Vietnam, there is a company that makes their Fish Sauce as Organic as humanly possible and it's well known World Wide... Then take Coconut Milk. Here in Canada, it's hard to find really good products, because they are filled with all kinds of Additives like Gar Gum, etc. I've been buying Full Fat Aroy-D, but recently I found another that is going to replace the Aroy-D (60% Coconut Milk) for "Real Thai" which is 85% Coconut Milk (Full Fat). To my thinking, there are not a lot of Coconut Farmers, who can afford to or even want to use Insecticides and/or pesticides, because there is little or nothing o be gained... I am quite comfortable buying "Non-Organic" Coconut Milk from Thailand, if the ingredients are Only Coconut milk and water... Likewise, there are many foods around the world that are very nutritious and non-organic, but are grown naturally, like Avocados from Mexico... The same holds true... I don't buy Avocados from California, USA, because they are sprayed with all kinds of Chemicals... When I say "Nutritious", I am NOT saying "Tasteless". On the contrary... One of my favourite dishes, is what I call "Thai Basil Chicken". Everything in it is Organic. I'm in Edmonton, Canada, so it's hard to grown plants like, Basil, here. I have a Huge, Hydroponic Garden, in my home, where I even grow "Lemon Grass". When I make my Thai Basil Chicken, everything comes from my garden. Because it is so Nutritious, people eat half of what they would, in a restaurant and they all go Ga-Ga over how good it tastes... One last thing... I Used to be Diabetic. I have since cured myself of the affliction, by changing my Diet... I rarely use any form of sugar, but have never gotten a complaint, from any guest... "Diabetes" is on the rise in Thailand and that is Only because of the "Menu"... People only add Sugar to recipes, because they 'think' they need some... No One NEEDS sugar... period. I've been writing a book for Diabetics, named: "Change the Menu and Change your Life". I'll shut up now... Thanks for your feedback :-) I appreciate it :-)

Calling it rice berry or rice berry rice is just silly. Call it berry rice. Simpler and makes more sense. Its Rice. It's NOT a berry. It's berry color so call it berry rice. Simple.
