Richard, love you videos, and love to catch bream and chinkapin (that’s what we call shellcrackers in Louisiana). But about 10 years ago I read an article in Field & Stream about a technique to find these fish which has changed my fishing life: drop shot! The technique is the same as bass fishing, but the tackle is different: a bream hook, fished about a foot above a 1/4 oz sinker. I have caught hundreds, if not thousands since I started using this technique! The other secret is the bait : I use nothing but Berkley fake crickets! I buy them by the jar, and I’ve caught as many as 5 fish on 1 cricket! Give it a try - you’ll be amazed!

I been in Lousiana quite a bit and never heard of redear sunfish being called chinquapin (chinkapin) which is a type of tree. Must just be you and your family because it isn't common and it certainly isn't correct. Everyone I know in the deep south call redears shellcrackers.

I'm right there with you brother! Sunfish are my favorite eating fish. Catfish is really, really good. As many other fish are. But nothing else quite matches sunfish for flavor and texture. And those crispy tails and fins are a treat that's hard to beat! In my humble opinion. It's a real waste to fillet a sunny. Scale them, remove the head and guts, score both sides, dip in butter milk and then roll in two parts seasoned cornmeal and one part flour. Give them a few minutes before putting in the Oil and allow the breading to set up on the fish before dropping in the oil. This way you end up with a lot less breading coming off your fish and burning on the bottom of your fryer or pan. Then deep fry or pan fry whole and enjoy. Scoring the fish allows them to cook faser, get crispier and allows the seasoning to go all the way to the bones. Scoring also allows ease of pulling away large chunks of bone free or virtually bone free, sweet, firm meat. And those crunchy fins are better than dessert. I find crappy meat bland and mushy. I throw crappy back. Not a fan. Same with black bass. Just can't compare to sunnies. Filleting a sunny is fine for children and picky females. But real men eat their Sunnies whole.
