This is our go to breakfast, sometimes with potatoes added. We do huevos con chicharron also.

This is a plain and simple breakfast. I'm 76 so I go for the ld style, I just add the cracked eggs to the frying chorizo. I love to see the white and orange of the eggs cooked between the chorizo pieces. Scrambling them in a bowl is the French way to make scrambled eggs. I like to see the white of the cooked eggs and I also like the eggs firm and dry. Well cooked. To each his own.

My favorite breakfast since a toddler...chorizo con heuvos con papas frijoles and fresh homemade tortillas. I have this at least once a week and my idea of comfort food add a cup of champurrado. 👍🙏👏🤙✌🌮🌮

One of my all time favorites. Can’t wait to make this version with the poblanos!!!! Funny enough, growing up as a kid in Mexico, I didn’t like chorizo. I found it overpowering. But now I love it. Typically, I like it with a salsa roja 😋

In 1964 my family and I spent 6 months in Mexico. My staples were Huevos con Chorizo, Pollo Frito, and Cafe con Leche. If I remember right you and your family were in Mexico at the same time. i am now 70 and Huevos con Chorizo is still one of my favorites. Unfortunately, it is hard to find good Chorizo in SW Colorado.

One of my all time favorite breakfasts. I make chorizo using what I believe to be Rick's recipe. We usually add diced roasted potatoes as well. The roasted poblano sounds like a great addition that we'll have to try.

I have learned, quite recently, that it is so much simpler to cut open the poblano, remove the seeds and veins, then roast them. No fuss; no mess. You should try it. It really is a game changer. Thanks for the wonderful, inspirational, educational videos.

Great recipe! I've been making this for breakfast for years - it's fast, easily made, and delicious... that's a winning combination every single time. I use serranos (if I can find good ones) or jalepenos, because the heat is my friend. 🥵👍

My fave! Yours look extra tasty with the addition of eggs and poblano. I cook my eggs with minimum stirring, dropping them into the middle of the pan after moving the chorizo aside and adding a bit of oil in the center of the pan. I like to see chunks of eggs in my tacos, looks better.

Rick, I've been following you since I discovered you, and I have to ask: what is the method with your utensil management? It seems you have them all in a container with some liquid. I see you pull them out without drying it or even shaking off before use, and in this video you took a fork used to beat eggs, put it back in there and later pull a serving spoon from what seemed to be the same container. Now, I know that you are certainly a professional, it just seems like maybe there is some countertop management technique here that I want in on.

I follow a lot of food channels here on KZbin. I’m following older women from Mexico from there ranch homes. The food looks hearty! Mr. Bayless, do you have a recipe for the chorizo? I had homemade chorizo once in Mexico City while visiting and I got a hint of vinegar, and bar none, that was the last time I ever had anything like that ever! And can’t seem to fined a good recipe for chorizo.

My next door neighbor used to make something like this for breakfast occasionally but with nopalitos in it. She always brought me a Care package when she did. I so missed that after I moved. Is it as simple as peeling a dicing the nopalitos to make the combo? I know nothing about the cooking of them, just the eating. ;) ALSO, I add in cheddar cheese to my eggs and chorizo and make it as a quiche. Love chorizo!

My wife is a vegetarian, but she LOVES the meatless chorizo from Trader Joes...with eggs for course. I cut up a Jalapeno and toss it in at the same time as the onions.

I grew up eating this but unfortunately I ran across a big fat vein in the chorizo and from that point on it just wasn't appetizing anymore, but I recently discovered soy chorizo and I was amazed with the flavor, less greasy and no veins or organ meat. Couldn't tell the difference in taste

When you fry tomatoes, onion and green peppers you are making sofrito, not pico de gallo, which is a fresh sauce. Also, my favorite “chorizo con huevo” is made with a tomato and dry chiles sauce. It’s frankly one of the best breakfasts I ever had at my family’s home in México. Edit: wait! You roast the chiles and then rinse them off briefly? You’re taking away all the delicious smoky flavor of the roasted pepper. What’s going on with you in this recipe?

I feel like I'm going to vomit everytime he pulls a wet utensil out of that nasty ass water and then puts them back in the water after using them... Mind you he pulled a fork to beat the eggs then put it back in there, then later pulls a spoon out that same water to taste the dish... Bruhhh 🤮🤮🤮
