He's using processed, shrezded cheese. Just use the proccesed cheese slices and throw that cheese in a little more than halfway through the cooking time. But you gotta cook the chorizo and egg at the same time. That's the whole point off egg and Mexican-style chorizo.

@@samthecookingguy Hi Sam. Yes, it is. Loved that video. English (British) cuisine hasn't got the greatest standing in the world, but it is not that bad and has some really strong offerings. You did a great job of showing the best we have!
