We have cooked baked porkchop fried rice in kitchen for more than 20 yr. And I am pretty sure almost no 茶餐廳 will use butter to make roux nowaday as the costing is too high. And I have to get Ricky a 100 full mark for this dish as he explains the right cooking method. 👍👍👍

Ricky, thank you for your reply. And from our experience, pan seared pork chop with egg coating has the best result for this dish, as it can seal up the juice inside the pork chop and also able to soak up the sauce as well. Thats why I said you are making this dish 100 percent right. The reason a 茶餐廳大厨 cooking porkchop in deep fryer is because deep fry pork chop consume less time than pan seared during cooking. And most 茶餐廳 kitchen are fast food kitchen and time sensitive especially during lunch time. We make this dish for 25 yr at Toronto area and still using pan seared pork chop like you are showing in the film instead of deep fry pork chop. 👍👍👍
