You need to have a command block to get the letters on the sign (they are just heads) and for the floating words I forgot what they are called but it is a command that I think was put on the server. I'm not exactly sure how it works because i did not add these commands to the server. Sorry! :(

You should use the Animania mod! It has a lot of cool things for horses, chickens, cows, etc even other troughs and great behaviours. animania.wikia.com/wiki/Animania_Wiki

You also need to feed your animals and give them water or they’ll become sad and you can’t ride or breed your horses. But if they are well fed and hydrated they will let you ride them into the sunset 😂
