This may be a silly question, but if they are using DIs, what’s the point of the amps? Is that just so it sounds cool onstage for the band? Or is the signal coming out of the amp into the DI and the cab at the same time?

They'll probably be running the heads out into a load box/cab simulation to go direct to front of house. Then the cabs just for stage volume
