You should have used two to three coats of polyurethane on all wood surfaces, vinyl flooring, and a formica type of countertop. A wood countertop should have minimum of three coats polyurethane and takes a week to cure between coats.

Hopefully you had time to put 2 to 3 coats of polyurethane not to only protect against moisture, but also to protect against light impact like skuff marks. Can't wait to see what kind of backsplash you'll pick for behind the sink as definitely don't want liquids and food matter falling between the sink surface and the wall its against. Seems like your 70% + complete till your maiden voyage !
