Nice roast! I like to sear mines using a Cast Iron pan. Also I use beef bone broth to make more gravy. I use a little mustard seed in my seasoning with half a tablespoon of honey. It's good to switch it up. Only rule with a roast beef is don't overcook it!

At what temperature did you cook it? How long before it reached 118 degrees?

The temperature is 325°. I'm sorry I did not exactly time it but I would say 45 minutes to an hour.
