---- Ingredients and step by step recipe ----
Meat (neck) … 1400 g
Olive oil … 3 tbsp
Salt and black pepper … to taste
Dry mustard … ½ tsp
Coriander … 1 tsp
Dried onion … 1 tsp
Italian herb mix … 1 tsp
Dried garlic … 1 tsp
Paprika … 1 tsp
Nutmeg … ¼ tsp
Onion … 1 pc.
Garlic … 4 pcs.
Rosemary … branch
Bay leaf … 2 pcs.
Step-by-step recipe:
1. Prepare the marinade: Mix salt, black pepper, spices (mustard, coriander, garlic, onion, Italian herbs, paprika and nutmeg). Add vegetable oil to make a paste-like mass.
2. Marinate the meat: Coat the sliced pork neck with the marinade and leave to marinate in the refrigerator for 10-12 hours (preferably overnight).
3. Fry the meat: In a preheated pan with vegetable oil, fry the meat on all sides until golden brown.
4. Add vegetables and spices: Cut the onion and garlic in half, add to the pan along with the rosemary and bay leaves. Fry them for flavor.
5. Stew the meat: Pour in 1 cup of boiling water, reduce heat, cover and simmer for 1.5-2 hours, checking periodically to make sure all the moisture has not evaporated.
6. Check for doneness: When the meat is soft, aromatic and easy to cut, it is ready!
7. Serving: The pork loin is delicious both hot and cold. Slice and enjoy!
