I really wish people would stop complaining about the videos being too long. He's teaching us a lost craft! Let him take his time! The previous video he did on the mother sauces was legendary. If the videos are too long for you, just save them and finish them later. Be honest, your not going to master each recipe after only watching it once, anyway. So stop complaining. A master chef of Chef JP's caliber should never have to feel rushed when sharing his knowledge with us.

watching him during the videos are lessons learned. He’s an excellent teacher. I can only imagine what it would cost to attend school to learn what he knows. Cooking is not rocket science. He makes it look easy. There are times when I had to review the videos 2 or 3 times, and I swear I learn more each time I watch them.

New subscriber here. I've always been interested in cooking, and am fascinated by the science of cooking. When I was a child, it was just me and my little sister. Our parents worked so much we only seen them once in the morning all week long until the weekend. I had to cook for my sister and I for many years. It was very basic but it gave me the time to really see what happens when you play in the kitchen. I am told often how good my cooking is, but I feel that its very basic. Watching you in the kitchen is really... well it feels like you are expanding my brain witg your knowledge and great energy. I love it and thank you for your hard work and willingness to teach!

Superb and really easy to do. As this cooking juice must be wonderful,with all that was poached in, I see it as well with a purée separately prepared, or even fries.And yes, strong french Dijon "moutarde à l'ancienne" and a glass of Chablis makes it a star dinner.Bon appétit dear Chef

I've discovered a trick on how to get really nice and brown chicken every time without painting it. When you're tempering your chicken, (I temper mine for about an hour and a half to 2 hours). I stuff the cavity full of as much paper towels as I can. I also cover the entire bird with paper towels. After an hour, I switch out everything, restuff the cavity, and recover the chicken. Then I just oil, salt and pepper. I do cook it in a convection oven, though. It turns out just as brown, if not more brown than what is shown here without painting the chicken.

Thank you Chef and Jack. I still prefer to brine the chicken and roast it in a Dutch (no lid) oven on a bed of vegetables. Not so much for the chicken but for making stock afterwards. Appreciate the time taken to create the video along with all of the editing so we can learn and pick up tips.

I love this technique. Just using the residual heat in the oven and cast iron pan to finish bringing the chicken to temp slowly rather than with full heat that would dry out the chicken. If I hadn’t made a big pot of duck cassoulet, I would do this tomorrow. But I guess I have to suffer until I get a chance to make this. Thanks Chef!

Salt, Pepper, and Paprika. You need salt, at least, but one can put other toppings. This is my Grandma's (RIP) style recipe, but I learned some new techniques. It looks fabulous. I am taking out a whole chicken now. The price of an entire chicken used to be a respite from poor quality and expensive beef. (I won't buy it at the supermarket. I go a butcher) for meat and pork as well. The cooking temperature will likely solve the problem, if any. Thanks, Chef! We need you at least 17 more years~
